• Fridges re-stocked

• Opened juices day-dotted

• Left-over fruit covered, day-dotted and returned to fridge

• Front bar cleaned with hot, soapy water and polished

• Fridge doors cleaned and polished

• Back bar wiped down

• Tills wiped down

• Speed-rails cleaned inside and out

• Ice-wells emptied, drained and cleaned thoroughly

• Re-stock bar caddies

• Refill/replace cordials

• Coffee machine cleaned and broken down

• Bar floor swept and mopped

GLASS WASH

• All glasses washed and replaced on bar

• Drip trays and bar mats cleaned and returned to bar in the correct place

• Glass wash drained, broken down and all parts cleaned thoroughly

• Glass-wash surfaces and walls wiped down

• Floor swept and mopped, including underneath all appliances

OUTSIDE AREAS

• Ash-trays cleaned and left with outside furniture in Arch 2

• Bins emptied and washed out

• Outside furniture and A-boards brought into Arch 2

• Barriers and Umbrellas brought inside

SERVERY

• All tables wiped with hot water and sanitiser and polished

• Menus wiped down

• Tables relayed with condiment boxes, menus and flyers

• Food area left clean and tidy

BACK OF HOUSE

• Cellar clean and tidy; all empty boxes flattened and thrown away

• Excess stock taken off bars and returned to cellar

• Room 101 tidy
