Cleaning

  • Have all bus bin areas been thoroughly sanitized and cleaned of any and all debris?

  • Have all bus bins been cleaned, sanitized, and replaced?

  • Have the bottom of both bar fridges been emptied, cleared, and cleaned?

  • Have all well areas been completely sanitized and free of any standing water?

Miscellaneous

  • Has pop gun and its holster been detailed, sanitized, taken apart and saran wrapped?

  • Have rubber caps been placed on all liquor spouts?

  • Has the slushie machine draw valve been saran wrapped?

  • Has sleeve cooler been fully stocked and placed on defrost?

  • Have all open wines (red & white) been married, sealed, pumped, day dotted and placed in cooler over night?

  • Have fans been placed in all high fruit fly areas? (summer only)

  • Have all back-up garnishes been covered?

  • Has the liquor wastage sheet been recorded, signed off, and communicated to Front Bar?

Stocking

  • Have all storm pours been rotated and checked for expiry?

  • Has the slushie machine been filled for the following shift?

  • Are there at least 2 items each of Clamato jugs and all available juices stocked in the bar fridge?

  • Are there at least 3 storm pours of Sangria stocked in the bar fridge?

  • Are there 2 of each red and white wine stocked and available for the following shift?

  • Have all beers and assorted non-alcoholic products been stocked to full for the following shift?

  • Have teas been stocked?

  • Have fresh clothes been set aside for the following shift?

  • Has all available glassware been stocked in the bar?

Daily Side Duties

Tuesday

  • Send the matting beneath the wine glass storage area through front bar dishwasher and sanitize the stainless steel beneath the matting.

  • Rotate all items stocked in the bar fridge from back to front. (ie: 6 becomes 1, 5 becomes 2, 4 becomes 3)

Wednesday

  • Empty the sleeve cooler. Ensure that the cooler has been set to defrost and unplugged for the following shift.

  • Sanitize all liquor bottles. Remove liquor spouts from bottles and send spouts through front bar dishwasher.

  • Before returning liquor bottles to the liquor display, sanitize the both the display and the area beneath and behind the display.

Thursday

  • Clean and sanitize the defrosted sleeve cooler. Plug the cooler back and and stock the cooler with cold sleeves, chilled liquor, wine chillers, and king cubes prior to opening the Back Bar.

  • Remove glassware from the top glassware shelf. Remove matting and send through front dishwasher. Sanitize the stainless steel beneath the matting.

  • Replace the matting and glassware. Ensure that glassware is stocked for the following shift.

  • Clean and sanitize the wine rack storage area beneath the ice well.

Friday

  • Remove all items from both bar fridges, and thoroughly clean and sanitize the cooler and newly cleared racks.

  • Return items to the bar coolers. Ensure items are appropriately stocked for the following shift, including an extra Sangria storm pour for a total 4 storm pours.

Saturday

  • Remove glassware from the bottom glassware shelf. Remove matting and send through front dishwasher. Sanitize the stainless steel beneath the matting.

  • Replace the matting and glassware. Ensure that glassware is stocked for the following shift.

  • Pull the sleeve cooler out from its corner. Sanitize all four sides of the sleeve cooler. Use a broom to clear the floor space beneath the sleeve cooler of debris. Sanitize the floor space beneath the cooler, and replace the cooler.
