Floor

  • Tables fully set up, menu for each seat, salt, pepper and sugar stocked. Don't forget one gluten free menu per table, in back of holder.

  • All tables wiped and free from residue and debris.

  • Outside tables (inc Terrace) set up with fully stocked clipboard menus, Gluten free menus tilted to one side so visible. Sugar, pepper and salt on each table as well as CLEAN ash trays (only out the front). N/A if weather doesn't allow for this.

  • Check all chairs tucked in to tables in and out and correct chairs per table.

  • Sweep outside areas regardless of weather.

  • Toilets checked - Handryer, flush working, toilet roll and soap full and no debris on floors. Check all bulbs are working. Check mirrors are smear free.

  • Check all bulbs are working up and downstairs.

  • Check mirrors are free of smears/fingerprints up and downstairs.

  • Glass panels on front and terrace doors are smear free.

  • Heating or aircon at correct level.

  • Music on and at correct level.

  • Sauces all stocked on pass (up and downstairs).

  • Kids area organised, crayons stocked.

  • All high chairs clean.

  • Newspapers out and up to date.

  • Cutlery fully stocked.

  • Fresh cakes/pastries out, presented well and all labelled correctly.

  • Water stations set up (up and downstairs) and glasses fully stocked.

  • Check dog biscuit jar is full.

Bar

  • Fridges fully stocked?

  • All spirit bottles polished on display?

  • All straw caddies clean and fully stocked?

  • Front bar clean and free from clutter?

  • All glassware fully stocked, clean and smear free?

  • Jiggers of all sizes available on all stations?

  • Enough bar equipment available for all stations?

  • Enough fruit prepped for the day? (lemons, limes, mint, oranges, cucumber)

  • Enough juice prepped for the day? (4 pink lemonade, 4 lemon, 4 lime and 4 gomme)

  • Everything in the fridge day dotted?

  • Juicer clean and set up correctly? Oranges fully stocked.

  • Ice well filled (don't forget crushed ice)

  • Speedrail fully stocked with pour spouts in every bottle.

  • Both glasswash machines clean and ready to go?

  • Beer nozzles clean and put back on.

  • Check bar (including tills) are clean, back bar not cluttered and nothing is sticky.

  • Check daily soups with kitchen and update on board. Don't forget allergens.

  • Check if anything is 86 on till and communicate with kitchen.

Coffee Machine

  • Grinder hopper full with shelves fully stocked ready for the day.

  • Calibrate grinder - 17.5g (+/-0.5g)

  • Espresso extract time 26-28s

  • All jugs clean and on station (check they are correctly labelled)

  • Check machine temperate is 118 degrees.

  • Cloths stocked - Green for steam wands, blue for surfaces.

  • Check milk fridge is fully stocked as well as soya and oat milk shelf fully stocked.

  • All crockery stocked and warmer is on. TEASPOONS are fully stocked?

  • Check teabags, marshmallows, filter coffee and syrups are fully stocked.

  • Chocolate sauce prepped, minimum 2 bottles made.

  • Set up filter coffee for the day and ensure spare filters are available.
