  • Hand washing sink water temperatures reach 100 degrees within 1 minute of running.

  • Call maintenance to report the water temperature issue @ 213-4121

  • Ice machine beside tea station is clean inside the machine and outside, all screws are intact and ice is visibly clean.

  • Any pots wet nested or placed out dirty (includes all green racks in kitchen)

  • Is the temperature in the Pot Sanitizing Sink below 75 degrees with a PPM of 200-400?

  • Check that tray line cooler gaskets are not torn or damaged

  • Make sure to complete a work order for all gaskets that are torn or damaged to Maintenance

  • Check that the Red and Grey hot box gaskets are not torn or melted

  • List work order number below

  • Dust noticed in any area. This includes ceiling tiles, vents, fans, ect. in Tray line or Dish Room

  • Which area is the dust in?

  • Drinks are stored in designated areas

  • Towels are stored in clean/dry containers or in sanitizer buckets.

  • Please make a note of where the towels were located.

  • Is the broken dish receptacle is emptied and clean?

  • All dust pans, mops, squeegees and brooms are stored on the green racks, not in the floor.

  • All items are stored off of the floor or no less than 18inch from the ceiling

  • Take picture, then correct your findings.

  • All chemicals in the mop closet and in the dish room have the proper labels.

  • Chemicals were discarded if no label was attached.

  • Check that microwave is clean and sanitized. Check inside, the door and the inside top for buildup.

  • Are there items are stored above the bottom red tape line, or 18 inches from the sprinkler head.

  • Document findings and correct ASAP

  • Check ceiling and vents for dust. Focus on the areas near fans, light fixtures and vents.

  • At the supplement cooler, pick one of the following rows to check the dates..

  • List the date of the FIRST supplement in the row

  • List the date of the Last supplement in the row

  • If FIFO is not being completed, please correct

  • Dish Room was assigned a cart to clean and cart was checked for completion

  • Check dirty cart rotation schedule. Take picture of cart before cleaning takes place.

  • Take the temperature of one cold item in coolers
