Opening Checklist

  • Locate 2 buttons on RIGHT side of the door near Pepsi fridge and turn them on

  • Login the POS using your punch code and turn on CDS (Customer Display Screen)(check for any pre-orders)

  • Turn on Saj Press by pressing the center white button

  • Turn on HOT CASE by pressing Power button (Temperature preset at more than 160 F)

  • Turn on STORE LIGHTS by buttons located in front of sink area (3 buttons including washroom)

  • Turn on line water heater at 80 C and add half bucket water in each heater

  • Charge music and deliverect tab if required

Re-Heating

  • Break big chunks of rice using hand until they’re separate (use gloves)

  • Reheat RICE, CHICKEN and BEEF at 380 for 20 mins or until temperature reached 60 C. (If the bins are more than half then reheat for 25 mins and after 10 minutes shake the bins so they get heated evenly)

Cleaning

  • Clean SAJ DOME using steel scrubber and soap water. After scrubbing, use a cloth to wipe it down with sanitizer

  • Clean TABLES and LINE TOPS using new cloth and surface cleaner

Washroom

  • Mirror is clean and doesn’t have any dirt on it

  • Hand sink and pot is clean without any blockage

  • Walls and floors are clean without any dirt or marks

  • Soap and paper towels are stocked

Equipments

  • Turn on Saj dome up to the black marks on the gas knobs (Turn on only 2 with knobs on them?

  • Turn on FRIES FRYER at 350C

  • Turn on FALAFEL FRYER at 350C

  • Turn on HOODS switch located at back area near drinks

  • Assemble chicken seekh on the shawarma machine from the freezer.

Line setup

  • Assemble the toppings and sauces on the line and make sure all the veggies look fresh (keep the lids on toppings to maintain temperature)

  • Change the reheated bins of chicken and beef and put them on hot line with rice

  • Setup Salad Section from the Salad fridge

  • Put cash in the till

  • Place Saj bread in the fridge below Saj Press

Compliance

  • Check temperatures for hot and cold holdings using temperature log

  • Fill sanitizer bucket and check the ppm using test strip (should be more than 200ppm)

  • Turn music on

  • Turn on open sign

11 AM to 4 PM

  • Cook rice if required (ask supervisor)
