COLD HOLDING: Are all in use products at the proper temperatures in order to ensure Food Safety? [Cold TCS items (salads, wraps, parfaits, etc.) must be held below 40°F in order to be Food Safe] IF PRODUCTS ARE ABOVE 40°F THEY MUST BE ROTATED INTO WALK-IN FRIDGE WITH TCS STOP CARD!!!
