Quality

  • Are McCafe food products in good condition and within their primary & secondary shelf life? Check for McCafe food products of food are stored off the floor, opened packages of food are covered/wrapped, product is not past expiry date.

  • Are refrigerated products in McCafe refrigerated units between 33 degrees to 39 degrees?

  • Is all calibration, small parts/equipment available, being used and in good conditions, check that scales, tongs and jugs available, used and in good condition, syrup pourers and other dispensers are the correct measure?

  • Is the grinder calibration correct, espresso machine finished coffee volume correct and extraction time as per the requirement, check for extraction time meet standard, finished espresso base meets required volume, grinder calibration meets standard?

  • Microwave/toaster/merry chef are correctly programmed and calibrated?

  • Is the process in place to monitor bean freshness and is it being adhered too? Check for 2 hour shelf life, bean monitoring process in place?

  • Does the McCafe food product’s appearance meet standard, check product assembled neatly with correct build and isn’t damaged?

  • Was the McCafe food served at the appropriate temperature, check if product is too hot or cold?

  • Does the McCafe food have correct texture, check food is hard, stale or dry, over toasted, over heated, under toasted, under heated, too soft, soggy or greasy?

  • Was the McCafe food fresh and did it taste good, check for stale, off, old tasting?

  • Does Espresso/Long black meet McDonald’s standards for appearance, check for drinks spilled over lid, incorrect amount/volume, cup not clean and dry, color too light?

  • Was the drink served hot, fresh and did it taste good, check for bitter after taste, too strong, too weak, blended/mixed incorrectly, watered down taste, not flavourful?

  • Does the milk drink meet McDonald’s standards for appearance, check for drinks spilled over lid, incorrect amount/volume, cup not clean and dry, color too light?

  • Was the milk drink served at the appropriate temperature, fresh and did it taste good, check for bitter after taste, too strong, too weak, blended/mixed incorrectly, watered down taste, not flavourful?

  • Does the McCafe ice drink meet McDonald’s standards for appearance, check for drink spilled over lid. Incorrect amount/ volume, color too light?

  • Was the ice beverage served at the appropriate temperature, fresh and did it taste good, check for too much ice, too little ice, drink big cold, bitter after taste, too strong, too weak, blended/mixed incorrectly, watered down taste, not flavourful?

Cleanliness

  • Is the McCafe display cabinet merchandising optimised to grow sales during specific day parts

  • Espresso machine is clean and in good repair, check for steam wand is purged and wiped after each use causing milk build up, no coffee grind is built up in group heads, group heads are free from coffee oil build up (remove the basket to check.)

  • Is the McCafe dishwasher clean and in good repair

  • Toasters are clean with no carbon build up and in good repair

  • Milk jugs are clean and free from build up, check jugs are rinsed between each use and jugs stored in fridge.

  • Are the grinders clean and in good repair, check oil residue found in hopper(should be cleaned out daily with paper towel), excessive coffee grinds built up on grinder, grinder out of calibration, tamper/size buttons broken or missing

  • Refrigerators including display cases and juggler are clean and organised and in good repair e.g door seals abs door closes properly

  • Microwave oven is clean and in good repair

  • McCafe area (floors, Walls, ceilings, vents &lighting are clean and in good repair
