5S/Housekeeping

  • Everything has a place - There is no stuff on stuff, all items have a designated location, non-production areas are clean and orderly

  • Equipment and areas are clean - no visible build-up or residue on equipment, areas appear clean and organized, trash is properly disposed of

  • No product on the floor - packages are not on the floor at any time, employees are reacting to an event that caused packages to contact the floor, no large pieces of meat or accumulation of product on the floor, spillage is addressed immediately

  • Temporary repairs - tape/stickers/labels are not used for temporary repairs, temporary repairs are marked with a date and a correction plan is documented

Standard Work

  • Visual boards are current with corrective actions where applicable

  • Home settings are reviewed and documented per shift and are posted at visual board

  • Standard work/MSW documents are reviewed and documented per shift and posted at visual board

Food Safety/Quality

  • Employees are following proper GMPs

  • There is no condensation or leaks above or adjacent to exposed product

  • There are no sources of potential extraneous above or adjacent to product or on product contact surfaces (ie metal, poly/plastic, grease, flaking paint/rust, loose caulk, etc)

  • Raw: SAP tickets & product labels remain on vats/combos until immediately prior to use (not being pulled ahead of time)

  • RTE: Rework is being sorted/inspected before being added to a vat

  • RTE: Only labels for the current product being run staged at/on the line and no more than the standard number of rolls/boxes are in the production room
