  • Hands washed upon entry to bakery and disposable gloves worn whilst handling naked finished product

  • Clean and correct uniform worn in the bakery

  • Only plain wedding bands worn (unless approved and on the jewellery register) and only metal detectable band aids used in the production area

  • Nothing in shorts/pants pockets (locker key allowed)

Housekeeping

  • No food, drinks, magazines or other personal items in the factory

  • Everything stored where it belongs. Nothing stored on top of equipment.

Pest Control

  • Doors closed and where installed door flaps/air strips kept shut (in down position)

  • Pest sightings reported and no infested materials present.

Equipment and Maintenance

  • No string or tape used in repairs that may contaminate the product

  • All faults reported and no faults present that may cause contamination

  • Compressed air hoses not lying on the floor

  • Tool register in place and all tools accounted for

Product protection

  • Metal detectors operating correctly and metal reject bins locked and secure

  • Where checkweighers are in place, they operate correctly (including reject device)

  • Where required, scaled are in place and operating correctly

  • Foreign objects are controlled. Only metal detectable pens and scrapers used in production areas. Thermometers, pens, calculators attached to work stations. Safety glasses stored correctly. No pins, staples, paper clips.

  • Take photo of area

  • Knives used are approved, intact and are not damaged and stored correctly

  • Date coding on finished product correct and legible

  • All containers, bins, spray bottles including chemicals correctly labelled and stored

  • Packaging and other raw materials stored correctly and adequately protected from contamination

  • Allergen are stored, labelled and handled correctly

  • Line forms are in place and being filled out correctly

  • No wood in factory. If pallets are used they are protected by pallet guards

  • No broken glass or rigid plastic. Refer to glass register.

Non conforming product

  • Non conforming product clearly identified/labelled and isolated for discard

Compliance

  • Is the score for this audit over 96%? If yes, production can start.
