Concession Stand

Popper Cleaning

  • Popper Kettle(s) Cleaned? (Inside cleaned with kettle cleaner, exterior surfaces free from oil, dust & carbon)?

  • Popper warmer(s) cleaned out and free of any kernels, popcorn pieces, salt, oil? Glass cleaned and free from oil splatter and streak-free?

  • Cabinet under the popper (oil storage area) cleaned out of any spilled oil, kettle cleaner, popcorn, kernels and all stainless steel surfaces completely wiped down and clean?

  • Top of popper cabinet completely wiped off and free of dust, oil, etc?

Popper Stocking

Soda Tower Cleaning

  • Have soda towers been disassembled (drip tray removed and cleaned, rear plate removed and cleaned) and all surfaces cleaned?

  • Bucket of clean, hot water poured down the soda tower drain?

  • All exterior surfaces of the soda tower cleaned (top, sides, ice bin door, etc.) cleaned?

  • Soda heads cleaned including cleaning the bottom of the soda heads with warm, soapy water and green scrub pad to remove any syrup? Tested for stickiness after cleaning?

Soda Fountain Drain Area Cleaning

  • Has the cover over the drain area of each soda tower been removed and the floor completely cleaned of debris, spills, syrup? Floor under the soda towers mopped if needed?

  • Have all stainless steel surfaces under the soda tower/ice bin been cleaned and are free from any syrup or spillage?

  • Area free of any fruit flies or pest activity?

  • Is the floor drain clean and free from debris or obstruction?

  • Are cupholders/lid holders clean?

Butter Machine Cleaning / Stocking

  • Is the butter machine cleaned and free from any butter, salt, buildup?

  • Is the butter nozzle clean?

  • If your butter machine holds the Butter BIB on the counter, is the inside completely wiped out?

  • Has the butter BIB connected to the machine been checked and changed (if needed)?

Icee / FCB Machine Cleaning

  • Has the Icee Machine drip tray been removed, washed and replaced?

  • Have all surfaces of the Icee machine, including the countertop base and sides of machine been cleaned and are free from spills, syrup leaks and dust?

  • Has the top of the Icee machine been cleaned and free from dust?

  • Is the Icee lid holder clean and stocked?

Nacho Warmer / Cheese Dispenser Cleaning

  • Has the Nacho Warmer been cleaned including glass, doors and top wiped off and free of dust?

  • Has the cheese dispenser been thoroughly cleaned? (Bags of cheese removed with the inside cleaned of any spilled/burned cheese? Exterior completely cleaned with cheese buildup/grit removed from sides? Cover free of any dust? Bottom/feet of cheese dispenser free of any spilled cheese?)

  • Has the nozzle been removed from the bag of cheese and completely cleaned?

  • Does the bag of cheese have a day dotting label that is visible in the window of the dispenser, above the nozzle, and not expired? Is the correct 5 day shelf life recorded on the label with dates and times recorded?

Oven Cleaning

  • Oven disassembled with all internal, removable parts thoroughly cleaned in the sink? Carbon removed?

  • All Teflon cooking trays, sheets and baskets washed in the 3-bay sink?

  • Oven properly reassembled?

  • Exterior surfaces of the oven cleaned? Free from dust? Fan/exhaust on back of oven cleaned and free from obstruction?

  • Hinge area of oven door (gap between door and oven) completely cleaned of crumbs and spillage?

Hot Dog Grill / Hot Food Warmer / Cheetos Popcorn Warmer Cleaning

  • Has the hot dog roller grill been cleaned (all rollers cleaned with warm, soapy water, exterior surfaces and drip tray cleaned?)

  • Has the sneeze guard been cleaned with water (not glass cleaner or other chemical) and is free from dust, streaks, splatter?

  • Has the bun warmer/warming drawers been thoroughly cleaned? Steam table (if applicable) cleaned and empty of water?

  • Hot dog buns in the warmer spoiled and disposed of?

  • Has the Hatco Food warmer been completely cleaned (inside wiped out, glass cleaned inside and out, shelves cleaned, and top of warmer wiped off and free from dust?)

  • Has the Cheetos Popcorn warmer been emptied and completely cleaned inside and out?

Countertops & Cabinets Cleaning

  • Has the rear concession counter been completely cleaned under, between and behind all countertop equipment? Surface is clean and free from buildup, greasiness or grit to the touch?

  • Have the face and doors (inside & out) of all cabinets been cleaned with warm soapy water to remove any drips, spills or splatters?

  • Has the front concession counter been completely cleaned under and between all countertop equipment and POS stations?

  • Has the guest-facing side/facade of the concession stand been cleaned with warm, soapy water and is free from any dirt, stains, stickiness or dust buildup? Is the lip/overhang of the concession counter free from any stickiness, gum, etc?

  • Have POS screens, cash drawers, and exterior of POS been wiped down and dust free?

Concession Refrigerators / Freezers Cleaning

  • Have all countertop coolers, under-counter coolers, ice cream display freezers been cleaned? Top of units wiped down? Under-counter units pulled out and the floor under/behind them cleaned?

  • Door gaskets of coolers and freezers checked and cleaned? Free from crumbs or buildup?

Concession Floor / Kickplate / Garbage Can Cleaning

  • Kickplate (tile or base cove at the base of the counters) cleaned?

  • Trash cans emptied and liners replaced? Exterior of trash cans cleaned and free of spills/splatter?

  • Concession floor completely swept with no spilled seed or pretzel salt in corners?

  • Floor mopped with clean, hot water and degreaser?

Concession Stocking

  • Napkin dispensers and Straw dispensers restocked at the stand and condiment carts?

  • Additional supply of napkins and straws available at the concession stand?

  • Appropriate supply of Zap Packs assembled for the next day's business?

Kitchen

Three Compartment Sink Cleaning

  • Are all 3 compartments of the sink clean and free of any debris or oil?

  • Are all stainless steel surfaces of the sink, including the backsplash cleaned and free from buildup or water spots?

  • Is the faucet/sprayer nozzle clean and free of splatter from rinsing dirty utensils/oven parts?

  • Is the area around the sink (drying rack, shelves, etc.) clean and neatly organized with everything in its place?

Soda BIB Racks

  • All surfaces of the BIB racks cleaned and free from any syrup drips/spills? Top shelf of rack wiped off?

  • All hoses cleaned with warm, soapy water and a microfiber? Free from stickiness and spills?

  • Verified that no empty soda BIBs are connected?

  • Soda pumps free from any audible CO2 leaks? No pumps running, indicating an empty BIB connected?

  • Backup BIB of each flavor available on or next to the BIB rack?

  • Verified that no expired/expiring syrup in connected or on the rack?

  • Verified proper rotation of stock with oldest BIBs (soonest to expire) connected?

Ice Machine

  • Verified that ice machine is functioning correctly bin is filling with ice?

  • Ice transfer equipment is empty and clean? Ice transfer scoops, buckets, paddles are stored in their proper place?

Refrigerators / Freezers

  • Exterior of refrigerator and freezer doors clean and free from streaks, splatter, fingerprints?

  • Gaskets of refrigerator and freezer doors are clean and free from crumbs, buildup or damage?

  • Bottom of refrigerator/freezers are wiped out and free from crumbs/debris?

  • Verified appropriate stock levels for backup bottled drinks, hot dogs, buns, pizza, chicken, etc. in the kitchen?

  • Verified all open cases of frozen foods have correct date labels on individual packages? (Once cases are opened, contents inside require their own dating label.)

  • Verified refrigerated hot dogs have date label with 7 day shelf life (date and time)?

  • Verified refrigerated buns have date label with 7 day shelf life (date & time)?

  • Verified that Beer & Wine back stock cooler is locked?

Kitchen Cleaning

  • All cardboard and trash removed, and can liners replaced? Trash cans clean?

  • All brooms, dust pans and mops returned and neatly hung? Dust pans empty of any trash?

  • All prep tables cleaned with warm, soapy water and sanitizer?

  • All supplies and stock put away, everything in its place. Kitchen neat and organized?

  • Kitchen floor completely swept with no popcorn kernels or pretzel salt in corners?

  • Kitchen floor completely mopped with warm water and degreaser?

Break Room / Clock Room

Break Room / Clock In Room

  • Break room / Clock in Room has been swept/vacuumed? No debris or trash on the floor?

  • Break room furniture (tables, chairs, couches) have been cleaned? Table surfaces wiped down?

  • Verified that no unpackaged food or drinks have been left out?

  • Employee refrigerator has been cleaned (inside and out). Any prepared foods have been disposed of or will be taken home today? Open drink containers are discarded?
