  • Kitchen benches and sinks cleaned and sanitized with no evidence of food crumbs

  • Gas and fryers are turned off, with hot plate covered by baking paper, and fryer covered by lid

  • Dishwasher is off, cleaned and front sliding door cover left open

  • All bins emptied with new bin liner for Sealife owned bins- FOH and BOH

  • All surfaces in Coral Atoll cafĂ© BOH OR alternative plate up area used is sanitized and clean

  • All kitchen floors are swept and mopped including under benches+ ovens and free of spillages or crumbs

  • All floors where event food service has occurred have been checked by the event manager for left-over food scraps, crumbs, or spillages and spot cleaned

  • All dirty linen in kitchen and event areas has been put away

  • The cool room has been checked for perishable foods before the chef on site leaves, to ensure everything is removed

  • Photos have been taken of any additional cleaning concerns and sent to Leah to address with Sealife

  • No food items have been left in the kitchen hotboxes from service and they are free of crumbs or food debris

  • No additional glassware or water jugs have been left around the venue or kitchen and have been returned to Coral Atoll bar

  • All cutlery has been polished and returned to containers/storage

  • The kitchen hand must wait and be signed off by the event manager until the above items have been checked over/completed.
