NIGHTLY AUDIT

CELLAR

  • Tidy kegs and isolate empties

  • Make sure wine and bottle corridor is tidy

  • Empty beer overflow tub

  • Empty cooler condensation bucket

  • Remove, destroy and recycle all empty boxes and cardboard

STOCK

  • Replenish crisps and nuts

  • Replenish fridges

  • Replenish wines, spirits and cordials

  • Replenish dog menu items

FLOOR

  • Wipe down and reset all tables to identical standard. All menu holders to have 1x drinks menu, 1x food menu per seat, 1x Winter Breaks leaflet, 1x Book Direct leaflet

  • Fully restock condiments

  • Wipe down front of both food lifts - including tiles below

  • Mop upstairs kitchen between lifts

  • Full breakfast set up (as per agreed spec)

  • Cutlery - at least 2 full drawers

FINAL BAR CHECKS

  • Thorough cleaning of coffee machine

  • Wash all drip trays

  • Wash all measures and cocktail equipment

  • Fully clean cocktail station - all bottled pulled out.

  • Wipe down till screens, card readers and receipt printers

  • Ice well - fully emptied and sanitised, ice buckets cleaned

  • Place fruit order with JR Holland (0191 481 0856 / acc no 5514)

  • All fruit wrapped and day stickered (today+1)

  • Remove and sanitise all nozzles - air dry and not left in water

  • Wipe down and sanitise front bar

  • Are fridge doors wiped down and streak free?

  • Are all straw holders filled up?

  • Has all clutter been cleared from glasswash area and shelving above sink?

  • Has the bar floor been mopped to a high standard - including under theshelving?

  • Has all wastage been recorded on the daily spreadsheet?

  • Has the glasswasher been cleaned completely? All internal parts to be removed and left out to air over night

  • Have all bins been emptied and bags replaced. Recycling bin also to be emptied every night

MANAGER

  • CASH - Have both tills been closed down and declared on Aztec?

  • CASH - Have all expenses been recorded and all receipts been filed in the correct place?

  • RECEPTION - Has all clutter been removed from the arae

  • DELIVERY NOTES - Have all Coors/Ale/Sir Woofchester delivery notes from today been entered and filed in the green file?

  • PAYMENT ANALYSIS - Has this been fully checked off and all variances fixed? File in the correct folder in the safe office

  • RISKPROOF - Has all daily and weekly Riskproof been completed?

END OF NIGHT SECURITY CHECKS

  • DOOR 1 - External kitchen entrance door locked?

  • DOOR 2 - Internal kitchen door locked?

  • DOOR 3 - Cellar hatch bolted on both sides?

  • DOOR 4 - Spirit cupboard/safe room door locked?

  • DOOR 5 - Door to cellar locked?

  • DOOR 6 - Door next to manager flat locked?

  • DOOR 7 - Fire doors to smoking terrace both bolted?

  • DOOR 8 - Middle restaurant door to guest bedrooms locked?

  • DOOR 9 - Front door locked upon exit?

  • WINDOWS - Are all bar windows shut?
