Outside area

  • Are all lights on, including signage?

  • Are all fridge temperatures recorded correctly and has action been taken where an issue has been identified?

  • Are all cakes day dotted including date of cake box?

  • Ensure food items are in date.

Store excellence

  • Are floors and skirting clean/dust free?

  • All lights working and dust free?

  • Condiments are well stocked and clean.

  • Are food displays dust and mark free?

  • Are walls and tiled clean and they aren't damaged?

  • Are all posters displayed Costa approved and set up according to recent point of sale manual?

  • Is the safety and legal poster displayed?

  • Is the red safety RFF folder easy to access and in correct order?

Service excellence

  • Do team members alter their style of service for each customer where required?

  • Do all staff have the correct uniforms on and do they follow company policy: piercing, jewellery and hygiene standards?

  • Does it take less than 5 minutes to serve each customer as per Costa brand standards?

  • Do all team members confirm amount in change and offer receipt?

  • Brand excellence manual is fully available?

  • Do managers have a full action plan for their last Costa check and have they completed at least 1 per month themselves?

  • Have all staff completed Barista and Safe and legal books?

Coffee excellence

  • Check 3 coffees and mark weather they meet brand standards or not. Use brand excellence manual every time.

  • Is the measure of an expresso correct 2x 30ml in 20 sec and has a daily check been documented with true figures?

  • Can the team explain why we do Grind and dose?

  • Is the coffee machine operating correctly?

  • Is the grinder clean? Empty and check for thick coffee layers.

  • Check dose of coffee is it to Brand standard?

  • Are milk thermometers calibrated and showing correct temperatures?

  • Are iced drinks created to Brand standards?

  • Do team members purge steam wand for every customer?

  • Is there a fresh green cloth available to wipe the steam wand?

  • Have all group handles been soaked and cleaned?

  • Are all stainless steel jugs clean?

Manager tasks

  • Are all staff files up to date?

  • Are all tasks complete on Cascade?

  • Has the cash reconciliation been completed and up to date?

  • Is the waste sheet complete and receipts attached?

  • Has the action plan been done for the previous weeks stock take?

  • Has the schedule been completed and is it within the allowed hours?
