BAR SET UP

Turn on dishwasher.<br>Make sure plug is replaced first

Flush all Synesso heads to 99 seconds. Run two of shots through each head to season the handles and screens

Fill up kettles, set and hold at 87 degrees

Check cold brew kegs. If less than 1/4 full bring down spare kegs from walk in cool room upstairs

Bring ice down for walk in freezer and put in Esky

Check all coffee and cake me use are upto date and neatly placed on bar. Print new ones if required, menus must be clean and not creased. Menus can be found in Aunty Peg's Dropbox.
Coffee technical set up
Dial in Espresso Coffee

Dial in espresso.
Dose in = 20g
Yield out = between 60g and 70g
Adjust the grind appropriately to push you EXT% as high as you can.
When you start to taste dry, chalky finish, roasts notes drop your extraction until you have a clean balanced cup.
Record perimeters for each coffee bellow and on Peramiter cards attached to appropriate EK43 grinder -
