PATIO

  • Patio heaters off?

  • Heaters around 442 off? (Must turn knob to '0')

  • Patio server station closed? (Nothing on top / exposed to elements)

  • All cushions organized on rolling rack and brought inside?

  • All doors to patio locked and secure?

KITCHEN LINE

  • All proteins in line coolers on ice? (Except steaks)

  • Knobs on sauté and broiler all turned off?

  • Heat lamps turned off?

  • Toaster turned off?

  • Brick oven turned off?

  • QSR screens wiped down?

PREP KITCHEN

  • Ovens turned off?

  • Steamer turned off?

FINAL CHECK

  • All checks settled in squirrel before 3am?

  • Squirrel shut down?

  • All cash bags dropped in safe?

  • GC cashout completed? Drop GC bag in drop safe.

  • All punch adjusts complete and accurate? (BPs punch in/out for their breaks?)

  • All doors shut & locked? Alarm set?
