FINAL WALK THROUG WITH COOKS

  • All garbage cans are clean free of food debris and standing water

  • Coolers/Freezers free of debris standing water and organized

  • Hoods are wiped down

  • Walk-in cooler and freezer all products are properly wrapped dated and labeled

  • All Fish in on ice and FIFO

  • Cold and hot line refrigerators are re-stocked for following day and properly covered with plastic film

  • Ensure that all food items in cold and hot line are properly rotated

  • All gas equipments pilots are lit

  • Fryers are clean no food debris

  • Aluminum foil under range has been changed

  • All equipment are turned off cleaned and wiped down

  • Dry storage organized cleaned free of food debris and standing water

  • All kitchen floors are being swept and wash no standing water or food debris

  • Knife holder free of food debris, wall behind cleaned, knifes cleaned

  • Can opener clean, free of food debris build up

  • Dirty linen bag needs to be change daily and replace with a clean one

  • Walls and under shelving in the prep and pastry area must be wipe down daily
