STAFF ROOM

  • Hydration Station present ?

  • Cleaning of staff toilets done to an acceptable standard ?

  • Staff room is tidy. NO debris on staff table or floor. Cleaning done to a compliant standard ?

  • Is the staff room free of dirty clothing?

KITCHEN

  • Post mix area is clean and tidy. Nothing is stored on top of machine. No post mix stored on floor

  • Are mop buckets empty and sufficiently clean?

  • Probe and probe wipes are available?

  • COSHH cupboard is clean and locked

  • All chemicals are stored correctly using the Traffic Light system?

  • Ovens closed down and cleaned satisfactorily - Have drip trays been emptied?

BACK OF HOUSE

  • Fallow space is tidy. No food debris present and pest free. Red Mop bucket is empty and clean

  • BOH corridors? Clean with no debris or residue?

  • Bin Room is tidy, no bags stored on floor. Free of food debris and residue?

  • Are all gastronomes free of old date residue ?

  • Dry store is tidy, nothing stored on floor, free from food debris?

BACK GRILL

  • ALL products are covered, dated and rotated correctly ?

  • BG surfaces have a good level of cleanliness

  • BG Fridge has been pulled out, swept and deck-scrubbed behind ?

  • Grill buttons are clean

  • sticker dispensers are clean

  • BG fridge seals are well maintained and clean

  • Does hand wash sink have soap, blue roll and hot water available?
