Daily Cleaning Checklist

Back Of House

  • Clean and restock dispatch station

  • Pour sanitizer solution down floor drains

  • Rinse trash cans as needed and clean exterior including handles

  • Wipe oven exterior and clean crumb trays

  • Clean portioning scales

  • Disassemble and clean sauce pump

  • Wipe all cooler, maketable and proofer gaskets with a sanitizer soaked cloth

  • Clean dishwasher interior, exterior and screens

  • Clean and sanitize hand sinks and restock supplies

  • Break down, clean and sanitize maketable, (this includes maintaining inside the maketable and removing debris and ice buildup) place clean pans and leave turned on

  • Clean and sanitize dish wash and prep sinks

  • Deck brush maketable, cut table and fryer floor areas

  • Sweep and mop all floors, including under and around equipment

  • Multi-catch pest traps positioned correctly against wall

  • Clean all floor mats

  • Clean mop heads in fresh floor cleaner and rinse mop bucket, sink and hang mop to dry

  • Clean and sanitize cut table including shelving and table legs

  • Clean fryer including scrubbing fryer vat, exterior of fryer, hood and filters

Exterior

  • Pick up litter (landscaping, parking lot, dumpster area with lid closed) sweep curbs / gutters, pull weeds (prior to dinner revenue)

  • Clean items outside of building including cigarette receptacles and trash containers

  • Clean door, door frame and threshold

  • Pick up litter (landscaping, parking lot, dumpster area with lid closed) sweep curbs / gutters, pull weeds (prior to open)

Front Of House

  • Clean Visi-Cooler /soda pop cooler door, organize, rotate dates and restock

  • Clean inside and outside of front door and door handles (prior to open)

  • Clean lobby and front counter area and empty trash

  • Clean inside and outside of front door and door handles (prior to dinner revenue)

  • Restock and organize supplies at front counter

  • Sweep and mop all front of house floors including rest rooms

  • Empty all front of house trash cans and clean as needed

Restrooms

  • Clean and sanitize all sinks, toilets, urinals and door handles

  • Sweep and mop floor

  • Clean and polish mirrors and other surfaces

  • Restock all supplies and clean dispensers

  • Empty restroom trash and clean trash cans as needed

Dining Room if applicable

  • Clean and restock beverage station and wait station

  • Clean and sanitize dining room tables and high chairs, wipe seats, window sills, and counters

  • Clean salad bar including cold pan, top and sneeze shield

  • Clean buffet bar including warming well, top and sneeze shield

  • Sweep and mop or vacuum dining room floor

  • Clean and sanitize drink dispenser nozzles

  • Wipe menus, shakers and table arrangers as needed
