Back Of House

Scrub, clean and sanitize all prep tables including shelves and legs

Scrub and sanitize all trash cans and dish barrels

Clean all monitors and holding brackets

Clean and organize cleaning supply area

Clean oil pumps and containers and check calibration
-
Clean all vents and spot clean BOH ceiling
-
Detail clean exterior of ovens and oven windows
-
Detail clean dish machine including holes in wash arms
-
Detail clean proofers inside and out, racks/shelving and gaskets and all outer surfaces
-
Detail clean all reach in coolers and freezers inside and out including doors, handles, shelving, gaskets and fan guard
-
Detail clean and organize walk-in cooler including door and frame and deck brush floor and under shelving
-
Clean outside and under water heater
-
Detail clean floor and baseboard with deck brush throughout restaurant, including under and behind all equipment
-
Scrub mop bucket and mop sink area
-
Detail clean and sanitize all carts, racks, mobile tables/shelving
-
Polish stainless steel equipment and surfaces throughout BOH
-
Scrub and treat all floor drains and clean covers
-
Spot clean back of house walls
-
Clean BOH light covers and replace shields or bulbs as needed
-
Clean and organize office area
-
Scrub under and around dish machine and sinks
-
Clean inside/outside of BOH door, wipe door frame, scrub door threshold

Disassemble and clean Hot Hold unit

Clean delivery pouches

Clean car toppers
-
Clean and polish fryer hood and filter, empty and clean drip cup
Exterior
-
Apply degreaser solution to sidewalk, curbs, drive thru areas, parking lot (3 stalls per day). Leave sit for 10 minutes, scrub and rinse

Clean all exterior signs, discard expired or torn/faded POP
-
Clean dumpster area (scrub pad, walls, grease receptacle, lid and gate)
-
Remove gum from sidewalks and scrub thoroughly
-
Detail clean all windows and window sills
-
Spot clean building walls
Front of House
-
Clean all interior signage/menu boards, discard expired, torn, faded POP, remove any POP residue from windows/doors
-
Clean Visi-Cooler / Soda Pop Cooler - inside and out including shelves
-
Clean lobby walls as needed (includes tiles/especially under front counter plants, pictures, POP & other décor items)
-
Clean all FOH vents
-
Clean/dust lights, blinds, plants, fixtures, decorations
-
Spot clean ceiling tiles as needed
-
Clean door frame and scrub door threshold
-
Detail clean all windows and window sills
-
Wipe down/polish front counter, POS registers, printers and menu boards
Restrooms
-
Clean doors/frames and polish stainless/signs
-
Wipe down ceilings, vents, and light covers
-
Clean walls; polish wall tile and door closures
Dining Room - if applicable

Empty, clean, sanitize and fill shakers (parmesan cheese twice weekly)
-
Clean vending machines, TV’s and other FOH items
-
Empty, clean and sanitize wait station ice storage bins
-
Polish all dining room
-
Detail clean tables including removing gum and polishing table bases
-
Dust all blinds, curtains and partitions
-
Detail clean chairs and benches including removing gum
-
Clean or discard all stained, chipped, cracked, or bent tableware
-
Detail clean and sanitize coffee and tea equipment
-
Wash silverware trays and storage bins in wait station
