  • Please walk around the bar checking and testing items before ticking off each point as complete. This daily walk-around should take no longer than 10 minutes and anything unticked should be added to your daily jobs list or passed on to management. Every audit should be exported as a PDF document and then e-mailed to the relevant bar manager.

First Impressions

  • Is the area clean and tidy overall as you walk in?

  • Tables and chairs are arranged neatly according to the printed floor plan, and are easy to navigate around.

  • All chairs are organised so there is just a single colour around each table.

  • Deliveries have been put away and are out of sight.

  • All lights are on and in working order (including fairy lights, lamp and fridge in main area?)

  • The pool table is in working order and is supplied with cues and chalk.

  • Both digiscreens are on (displaying SU adverts) and working.

  • Beer font lights are switched on.

  • Drinking water is available on the front bar.

  • The 'help yourself to milk and sugar' area for hot drinks is set-up incl. bar mat and signage.

  • There is a clear no service area above the bar sink, incl. signage?

  • Cookie jars are full and on display neatly, along with cereal bars, next to the right-hand till?

  • Any deliveries for pastries, fruit and/or milk stored in the outside container have been emptied and are now on display, with delivery notes folded away?

  • Both swing-boards are outside on display (one propping open the patio gate, one outside the main entrance automatic doors)?

Behind the Bar - General

  • The floor has been swept and mopped the previous night - it should be clean and not sticky.

  • The bottle bin has been emptied and disinfected?

  • Recycling bins have been emptied and bags replaced?

  • Fridges are fully stocked.

  • Fridge lights are on and in full working order.

  • Below the bar and drip-trays has been properly scrubbed.

  • Clutter has been removed/tided from around both tills.

  • Fruit is cut and ready to serve.

  • The ice scoop and any spare measurers are stored in sanitiser on the front bar.

  • Spirits shelves are arranged neatly and all products we sell are on display?

  • Cutlery area and shelving below is neat and tidy and items are arranged according to shelf labels?

  • There are enough till rolls (of all types) to last the day?

  • Are there any kitchen specials, and if so are they clearly advertised?

Behind the Bar - Coffee Area

  • The coffee machine is switched on and looks generally clean and polished?

  • Coffee mats and products behind the bar have been set-up and arranged so things look neat from a customer's point of view? (see photos in staff folder).

  • Shelves underneath the coffee area are neat and tidy? (see photos in staff folder).

  • Glasswasher is on, running hot and in working order?

  • Hand wash basin is clean.

  • Is hot running water available?

  • Anti-bacterial soap is available.

  • Disposable hand towels are available.

  • Hot Drink loyalty cards and the SU stamp are on the till ready to hand out and use?

Cold Cellar

  • Is the cellar at the correct temperature? (between 11-14 degrees).

  • Are the lights in working condition?

  • Is the floor clean and clear of any rubbish/debris?

  • Kegs are stored safely and in the correct date order.

  • Are crisps and snacks stored high-up and away from wet-floor areas?

  • White roll is readily available from the wall dispenser.

  • Products on the shelving unit are neatly arranged according to labels.

Dry Cellar and Kitchen Area

  • Is the ice machine clean and working?

  • Is the ice scoop stored in cleaning sanitiser solution?

  • Delivieres have been neatly put away and products stored correctly on shelving?

  • Bottled products on the pallets are arranged neatly and have been rotated?

  • White roll is available from the dispenser.

  • Bins are empty and ready to use, including food bin.

Cleaning Cupboard & Storage Room

  • Available products are arranged neatly and in accordance with labels (see staff folder for photos).

  • Deliveries have been put away and everything is off the floor.

  • Brooms, squeegies and spot-sweeps are hung up off the floor; mop buckets neatly arranged against the wall.

  • Alliance cleaning guides are clearly visible.

  • First Aid Kit is clearly visible and signposted and fully stocked?

  • High-vis fire warden jackets are hung up and readily available.

Toilets

  • Toilet lights are all working and switched on.

  • Each toilet is unblocked and flushes easily.

  • Toilet roll is available from all dispensers.

  • Hot water is running in every sink.

  • Anti-bacterial soap is available from every dispenser.

  • Blue hand towels are available from every dispenser.

  • Poster holders are up-to-date.

  • Toilet check sheets are visible and being filled in.

Patio

  • Patio is generally clean, clear and well swept.

  • Entrance outside has been swept and is generally clear of rubbish/bottles/fag butts.

  • Outside bins have been emptied and bags replaced.

  • Tables and benches are clean and clear of any debris.

  • Ashtrays are clean and distributed evenly across tables.

Alleyways & Fire Safety

  • Back alley has been swept and is clean and clear and is generally tidy and free of clutter (there should be little more than the hose, grit salt container, ice chest and brooms visible!)

  • Outside brooms are hanging up off the floor.

  • Barrels are stacked neatly in first container and no more than two-high.

  • Bags of plastic cups are stacked neatly (and full) in the first container.

  • In the second container bins are neatly stored and the area has been swept/is tidy?

  • All recycling bin lids are closed.

  • Fire extinguishers are in designated areas.

  • Fire evacuation notices (beside fire alarms) are visible to staff and customers?

  • Part B of the Licence (framed near bar).
