F&B Kitchen Procedures

  • All TMs properly wear the correct PPE including a face mask and gloves.

  • Every kitchen/station has a sufficiently full bottle of Ecolab Oasis Multi Quat Sanitizer at a dilution of 5 ml/L

  • All prep and cooking surfaces area clean and free of excessive food and debris.

  • Knives and cooking utensils are placed a sanitizing solution of Ecolab 22 Multi Quat at a dilution of 5 ml/L covering the entire blade or in a UV-C sanitizer unit.

  • 3 Sink DIsh Washing Method

  • Two part disinfection mat

  • Sanitizing mats are in good condition and suitably clean. The mat is sufficiently filled with Ecolab 22 Multi Quat Sanitizer at 24ml/L dilution during business hours [test by tapping mat - 2 time periods, take pictures with time stamp]. (P.RD.07.005 - C)

  • The locker rooms are well ventilated. Any air-conditioning/fans must be clean and free of dust (filters, fan blades, fan grills).

  • Locker rooms are clean and in good condition. There are no debris or clothing left on the floor.
