This form is a guideline checklist to remind you what to look at and to help you to take notes. It is not designed to generate a score and the purpose of your visits is not to "catch" the Restaurant doing something wrong but rather to work together with the Restaurant managers and shift managers to strengthen operations so that our Restaurants meet three key goals:

    1) being in close compliance with the Subway System, especially as regards food safety
    2) providing a great experience to customers (and a nice working environment for staff) and
    3) earning profits

  • Is the restaurant completely free of handwritten signs?<br>餐厅是否完全没有手写标志?

  • Does all artwork appear to be correctly placed? (Check for example for artwork which is partially hidden behind other items)

  • Top of Coke fridge is free of dust? Top of the door also free of dust? Glass is clean and free of unnecessary stickers? 可口可乐冰箱顶部干净无灰尘。玻璃清洁,没有多余贴纸。

  • Move the Coke fridge. Is the area behind clean?<br>移动可乐冰箱。 后方区域是否干净?

  • Is the floor clean including all the way up to the corners?

  • Open the cupboard under the coke machine and check with a torch. Is it clean with no syrup spills and no signs of pests? If there are any signs of pests please escalate immediately. 打开机打饮料下方橱柜,用手电检查。是否有糖浆溅出,是否有害虫的痕迹?如果有害虫的痕迹,请立即清理。

  • Are all BIBs within their Best Before Date? 所有糖浆是否在有效期内?

  • Is the hot drinks menu professionally produced and meeting brand standards? 热饮菜单是否制作专业,符合品牌标准?

  • Is the sandwich prep area free of unapproved / non-standard items of equipment ? 三明治准备区是否有非指定/非标准设备?

  • Is the sandwich unit glass clean? Are any decals in good condition? 三明治操作台玻璃是否干净?贴纸是否完好未损坏。

  • Are the metal tops of the hot well and cold well clean? Run your hands along the top to feel for sticky grease build up. 热餐台和冷餐台顶部金属台面是否清洁?用手划过顶部,感觉油脂是否堆积。

  • Are the sauce bottle labels clean / unstained and readable? If not please replace them immediately. 酱料瓶贴纸是否干净/无污渍、字迹清晰可读?如果不是,请立即更换。

  • Under Counter Chiller refrigerator and components are functioning properly and in good repair. The unit maintains product at a temperature between (0.4° -5°C).   • Is bread cabinet in good condition, clean and free from crumbs? 面包展示柜是否状况良好?干净并无碎屑?

  • Is the top of the oven / proofer clean? This does not have to be completely dust free but it should look as if someone has made an effort to clean it in the last few months. 烤箱/醒发器顶部是否干净?顶部可能会有灰尘,但是看起来需要有清洁过的痕迹。

  • Is the area behind the oven / speed oven / microwave clean? (Use a torch or your mobile phone to shine some light in there). All the items on the back line should be moved at least monthly so that the area behind can be cleaned. 烤箱/快速烤箱/微波炉后方区域是否清洁?(使用手电或者手机照明进行查看)每月至少移动后方区域设备一次,彻底清理该区域。

  • Stainless Worktops are clean and shiny. Items are neatly placed on top and it is free from clutter.不锈钢工作台干净并光亮。物品摆放有序。

  • Speed oven is clean and free from food debris. Handle and seals are clean. 快速烤箱干净无食物碎屑。把手及密封条干净无污渍。

  • The toasting paddle and basket are clean and in good condition.烘烤托盘及篮子清洁且状态良好。

  • Are the staff following correct procedure for the use of the speed oven paddle and basket? Specifically they should not be placing the speed oven paddle on the white cutting board or over the cambro pans in the sandwich unit.员工是否正确使用快速烤箱托盘及篮子?需特别指出,店员不可以将其放在白色垫切板或三明治操作台积盒上方。

  • Check temperatures of 6 products in the cold well of the sandwich unit and one product in the hot well. Are the temperatures within the correct ranges?   • Review temperature logs. Are they up to date? It is vitally important that the temperature logs are taken at least twice a day and that the Action Log is maintained. If the temperature log is not up to date then we will move the Restaurant on to doing 4x per day temperature logs. BACK ROOM

  • How is the temperature in the back room? 后厨温度如何?

  • Check several high (hard to see) surfaces for dust. Are they dust free?

  • Are the fridge and freezer holding correct temperature? 冷藏和冷冻柜温度是否正确?<br>

  • Are the tops of the fridge and freezer clean and dust free. 冰箱及冷冻柜上方干净无灰尘。<br>

  • Are rubber seals for fridge and freezer doors free of black mould? 冷藏和冷冻柜门橡胶封条是否工作?

  • Freezer interior is frost/ice-free and rust-free with no debris on the floor. The compressor unit is dust-free. Handles and seals are clean. No items are being put directly on top of Chillers/Freezers. 冷冻柜内部结霜/没有冰层,没有生锈,并且地面上无碎屑。压缩机无灰尘。把手和门封条干净。冷藏柜和冷冻柜上面没有直接放置物品。

  • Is all food in the freezer fully frozen? If any frozen items are soft to the touch you must investigate the reason and take corrective action. 冷冻柜中的食品是否全部冰冻?如果冷冻食品摸起来变软,那么需要找出原因,采取正确行动。<br>

  • Are both the fridge and freezer free of the plastic packaging material?

  • Is there bread in the retarder? 是否有面包在解冻?

  • Confirm that the 3 compartment sink is being properly used in accordance with Subway's system for washing, rinsing and sanitizing cambro pans and other utensils. Must be using hot water (above 49C) and must be using authorized Kay Chemicals sanitizer. Note that if the 3rd sink is not full of sanitizing solution when you visit then it is likely that the procedure is not being properly followed. Also check that when you run the hot tap that hot water actually comes out.   • Is the backroom free from any sign of cockroaches or ants or rats. You have to look for signs as they will not be obvious. Use a torch to look into corners and behind large items. 后厨是否没有蟑螂、蚂蚁或老鼠的迹象?由于虫害痕迹不明显,所以需要仔细查看。用手电筒查看角落以及大型设备后方。
