    The purpose of this audit is to provide a quick and accurate way of maintaining high closedown standards at Brewhemia whilst adhering to all EHO and safety requirements also identifying any shortfalls in required procedures so that they can be resolved quickly.

Bar Closedown

  • Break down station one clean, Dry, Rebuild.

  • Break down Dispense Station Clean, Dry, Rebuild

  • are all front bar tops wiped with A7 of hot soapy water cleaned and dry including rims?

  • all back bar tops wiped and dry? also all gantry's organised and tidy?

  • Are all hand-wash stations free from any foreign contaminates

  • Blue roll holders filled

  • Bottle up completed

  • After Close break down central station, Clean, Dry, Rebuild.

  • all of the above complete?

  • Glasswash area cleaned broken down and rebuilt?

  • all metal frames and walls washed and sanitized?

  • all floors swept

  • all floors moped to a high standard and mop left to dry after use?

  • Remember to put all dirty cloths and mops down to the washing machine in the basement kitchen...
