    Make any notes from last nights close and record it in the logout book.

WELL 1

  • Remove saran wrap and nipples from both wells, regardless if second well is open or not.

  • Fill or marry syrups and juices to put in well.

  • Make sure fruit jockey boxes are filled with water + ice, and plugged with wine stopper.

  • Make sure fruit is fresh (record any wastage)

  • Fill rimmers with salts.

PREP

  • Skewers prep: this par includes front bar, back bar, (patio bar if necessary) and porter fridges.

  • Lime wheels

  • Mint

  • Sugar Cubes

  • Thai Basil

Fridge Par (Backup)

  • 2 packs of blackberries

  • 1 pack of rasberries

  • 1/9th insert of strawberries

  • 1/9th orange wheels (1/6th on saturdays)

  • Full insert lime + lemon wedges

  • 1 bocconcini

  • 1 storm pour pickle juice

  • 1 storm pour of pickle juice ( date/labeled)

  • 1 storm pour of lime juice

HACCP & Misc.

  • Check dish chemicals, change any if needed. Record in binder.

  • Bleach bottle is filled and dated.

  • Sanni and polish bar top.

  • Set up wood for service.

  • Fill insert with sanitizer and white cloths

  • Turn on Bellini Machine
