Bakery Production Planner review

  • Is the promotional planning completed 12 days out? Have adjustments on base forecast been made?

  • Are there 2 weeks of production planners available? It should be in a used state with manual adjustments etc

  • Review planner for the current day. Has there been adjustments made? (forecast packs required and packs to make columns are different in some articles)

  • Scan articles and compare to the current days production Planner. Do the sales and the stock available add up to the expected packs to make?

  • Team should have a printed copy of the dough scheduler available to review. Check the available range against the order of bake e.g. Ciabatta

  • Can the team explain the difference between the production planner & the dough schedule

Deli Production Planner Review

  • Is the promotional planning completed 12 days out? Have adjustments on base forecast been made?

  • Review planner for the current day. Has there been adjustments made?

  • Scan some articles and compare to the current day’s Production Planner. Do the sales and the stock available add up to the expected number of chickens produced and sold?

  • Is there shredded chicken available in the case?

LSM Review

  • Has the store achieved 100% compliance for the last 7 days?

  • Have alerts for the day been actioned?

  • Have the correct reasons have been identified for the alerts?

  • Is there corrective action for identified issues? e.g tickets printed if missing ticket was the issue

  • Is the time taken to acknowledge alerts is realistic?

  • Talk to some team about LSM, can they explain/do they understand the process?

  • Has your score improved from the previous year?
