Cleanliness - front of house

  • Landscaping - no weeds,debris,litter,cigarette butts,etc

  • Parking lot/ curbing- no weeds, leaves, debris, litter, cigarette butts, snow or ice

  • Dumpster, dumpster pad/ area - no weeds, debris, litter, pests, odor, grease. Gates closed and in good repair

  • Building- does not have excessive dirt, walls clean, no stains, no run- off, etc.

  • Sidewalks / back door area - sidewalks scrubbed clean, free of litter, debris, leaves, gum-spots, stains, snow or ice.

  • Outside windows - clean, no broken seals, no foggy windows,no streaks or spots. Ledges must be clean

  • Drive thru speaker post / confirmation board and menu board - lights work, box clean, glass clean and not scratched, no light gaps or tape. Painted as needed

  • Drive thru lane / pad - no trash, debris, gum, excessive grease build up, snow, ice, or standing water, etc.

  • Drive thru windows - cleaned daily, no finger prints, build up, foggy or streaked windows. Frames cleaned and painted as necessary

  • Drive thru wall under window- area directly below window is clean. No sauce spots, no stains.

  • Entry doors- clean, no broken seals, no foggy windows, no streaks or spots, no buildup on frame from handling. Threshold clean, glass spot cleaned frequently. Hours of operations posted and visible.

Restrooms - Men and Women

  • Floors and base tile - clean, no build up , debris

  • Walls, stalls, and entry doors, - clean no graffiti , streaks, dirt, stains, etc. Only paper towel are used to clean restroom surfaces.

  • Ceiling ( tiles / grid/ vents) - clean, no build up, stains, rust, dust. All tiles in place.

  • Lighting - clean , no bugs in lenses. All lights working

  • Sink / Fixtures / mirrors - hot and cold water available, sink fixtures and mirror clean. Only paper towels are used to clean restroom surfaces<br>.<br>

  • Toilet / urinal/ sanitary container - Toilets, urinals and sanitary containers clean. Only paper towels used to clean restroom surface. Specified brush to clean toilet, towels in dispenser

  • Soap / paper products / dryer or towels - soap, towels and tissue available. Tissue in dispenser, not on top of toilet, towels in dispenser.

  • Trash can - cleaned, emptied as needed, lined.<br>

  • Bathroom caddy - setup correctly containing spray bottle with comet cleaner, spic n span. Toilet brush and paper towels.

Lobby

  • Floors and base tile - clean, no build up , debris. Lobby mats are clean and well maintained

  • Front counter - clean, nears no buildup or debris, cups not sitting directly on counter . Front of counter clean and appealing.

  • Trash receptacles - Clean inside and out, behind and under. Emptied as needed, lined, no odor

  • Walls - clean, no dirt, stains, peeling paper or paint,etc.

  • Ceiling ( tiles / grid/ vents) - clean, no build up, stains, rust, dust. All tiles in place.

  • Lighting - clean , no bugs in lenses. All lights working

  • Beverage center / condiment stand - beverage towers and sauce dispensers labeled, clean, with no buildup, nozzles cleaned nightly, ice chute removed and cleaned, napkin/straw dispenser and condiment holders cleaned.

  • Menu board - lights work, box clean, glass clean and not scratched, no light gaps from improperly fitted strips, no scotch tape.

  • No hand written signs - posted anywhere. Cash registers, printers and monitors clean,

  • Sanitize pans - setup, available, proper dilution, and changed hourly

Dining Room

  • Floors /carpet / base tiles/edging - clean , no buildup, debris. Carpet not stained

  • Walls/ decor. - clean, no dirt, stains, peeling paper or paint, decor clean and neat

  • Inside windows/frames/ledges- clean, no streaks, or spots, no buildup

  • Tables - no table that requires attention remains unattended for the duration of the dining room visit (15 min). Table cleaned with detail. No old gum under tables

  • Seating - (chairs / booth/ seats/high chairs) clean, no buildup

  • Lighting - clean , no bugs in lenses. All lights working

  • Ceiling ( tiles / grid/ vents) - clean, no build up, stains, rust, dust. All tiles in place.

Cleanliness - Back of house

  • Cutting boards (prep and cutting boards) - washed, rinsed, and sanitized every 4 hours with brush as per osm.

  • Prep slicer, tomato tamer are properly washed,rinsed, and sanitized after each use as per osm.

  • All required/approved cleaning and sanitation chemicals are present and used.

  • Sanitizer at proper concentration and test strips available. Chlorine test strips are available for shake machine.

  • Cleaning and sanitation chemicals are properly labeled and stored

  • 3/4 compartment sink setup up properly as per osm.

  • Frontline / drive thru - floors/walls/ ceilings - floors, tiles,including corners clean. Walls , surface clean. Ceiling tiles, vents, grid and light lenses all clean.

  • Sandwich chutes/ heated landing zone- clean , sanitized and in proper working order. Clean under sandwich chute.

  • Frontline refrigeration - gaskets, shelves, and interior surfaces, are all clean. Fan guards in place. Handles sanitized daily.

  • Frontline/drive thru - shelves/ food storage areas - Clean, no debris, no buildup, organized. Tea, coffee, beverage system clean.

  • Dessert display / turnover display- clean, no build up , mirror clean, lights clean, operable and in working order. Clean under display, no hand written signs

  • Shake machine - clean , no build up . All 3 brushes available and used. Brushes and stainless steel pail are clean, sanitized and stored in the walk in color. Break bacteria cycle of mix and syrup as required. . Blender spindles washed rinsed and sanitized every 4 hours.

  • Backline floors/walls/ ceilings - floors, tiles,including corners clean. Walls , surface clean. Ceiling tiles, vents, grid and light lenses all clean.

  • Utensils, small wares, tables and other food contact surfaces properly washed, rinsed and sanitized every 4 hours- verified with 4 hour sanitize checklist and beef sheet

  • Backline refrigeration - gaskets, shelves, and interior surfaces, are all clean. Fan guards in place. Handles sanitized daily.

  • 4 hour. Cleaning caddy - properly stocked and labeled with spray bottle with dawn, comet for close ,water, Mr. Clean. Slicer brushes, paper towels and scrub pads

  • Slicer heat lamp- bulbs or elements and holder clean and working, positioned properly. Food safe/shatter proof bulbs used.

  • Roast beef slicer is properly washed ,rinsed, and sanitized every 4 hours as per osm

  • Scales-test weights available. All scales must be clean and working. All glass is clear and not broken and dials are readable. Scales calibrated daily.

  • Vertical contact toaster - clean interior, backside, clean and free of all carbon buildup. Release sheets maintained daily as required, changed every 45-60 days. Belts maintained daily as required, changed every 3 to 6 months. For roundup and 18-24 months for marshal air.

  • Microwaves filters clean and present, interior,exterior , top and sides. Appropriate microwave chart present. Programmed times to match current chart. Interior microwave cavities washed, rinsed and handles sanitized at least every 4 hours.

  • Cheese machine- clean and sanitized inside and out. Button sanitized every 4 hours

  • Cooking ovens - clean, interior, exterior, and racks, door gaskets clean, door closes properly. Handles sanitized every 4 hours.

  • Heated holding drawers - clean, inside and out, gaskets clean, drawer closes properly. Handles sanitized every 4 hours

  • Beef holding cabinet- clean inside and out, racks and gaskets clean, drip pan clean and free of buildup. Handles sanitized every 4 hours

  • Fryers/ hoods - fryers clean, free of grease buildup inside the cabinets and on the exterior sides. Fryers work properly. Filtration system works and is used daily. Fryers are skimmed regularly. Safety gloves available and used. Hoods are serviced every 6 months by licensed professionals. Sticker observed

  • Fry holding station - heating bulbs or elements all operable. Holding area free from grease buildup. Lights operable and food safe.

  • Kitchen floors/walls/ ceilings - floors, tiles,including corners clean. Walls , surface clean. Ceiling tiles, vents, grid and light lenses all clean.

  • Ice machine- clean and in good repair. Door gaskets clean and free of mold. Dedicated scoop and bucket used. Exterior door of ice machine , ice bucket and ice scoop must be sanitized daily. Clean and sanitize ice maker and bin every 3 months

  • Storage area - clean and free of debris both behind and under shelving. Shelves are clean and organized. Chemicals are stored properly away from food items

  • Walkin cooler - clean, sanitized and organized .Products must be stored 6" off the floor. Door handles cleaned every 4 hours .

  • Hand washing and sanitizer pans- strictly monitored with timer, hands washed as needed ( drinking, smoking, changing tasks, etc). Hourly sanitize pans changed

  • Walkin freezer - clean, sanitized and organized .Products must be stored 6" off the floor. Door handles cleaned every 4 hours. No ice build up on floors or coils
