Prior to Close

  • Are Cabinets, Shelves, and Low Boy Cooler Stocked?<br>

  • Are large Items Stocked (Sauces:Honey Mustard, CFA, Poly, Ranch, Buffalo, BBQ, Mayo, Lite Mayo, Ketchup-2, Honey Roasted BBQ, Honey, Condiments: Crackers, Bell Peppers, Roasted Nut Blend, Granola. Cups: 20oz, 32oz, 14oz, 12oz. Lids: 12/14/20oz and 32oz)

  • Are Floors Scrubbed (Pull out Low boy cooler, and IceDream Machine)?

  • Are Condiment holders and displays pulled back behind the counter and stocked? (Napkins, Straws, Sauce Displays)

  • Are all trays cleaned, lined, and placed in the appropriate Cabinet?

  • Drain Coffee Pots. Run hot water through them. Scrub thoroughly with blue brush. Take brush back to dishes for washing.

After Close (9pm)

  • Bring Tea urns to the kitchen and drain

  • Break down IceDream Machine<br>Save ice cream, date label and place in walk in cooler.<br>

  • Remove IceDream Toppings, and Refrigerate<br>Thoroughly Clean outside of machine (removing side topping panel)<br><br>

  • Run Kay 5 surface sanitizer water solution (Green sanitizer with 2.5 gallons of room temp water) through the machine once. Use white brush to clean inside.<br>

  • Rinse once before taking the machine apart for dishes.<br>Turn machine OFF

  • Break down lemonade machines<br>Thoroughly clean outside of machine, removing all remaining pulp and lemon residue<br>Turn all 3 switches OFF (both pump switches and the coolant switch)

  • Save any lemonade that has been placed in the machine after 12pm (exception Saturdays and Discard)

  • Double Check to make sure that EVERYTHING is stocked for the following day<br>**Only stock dipping sauces when empty**

  • ALL Surfaces are wiped down and free of crumbs or any residue.

  • Walk around to front, front Wood Paneling is Wiped Down and Clear of stains or residue.

  • Drink Towers are closed properly<br>Nozzles soaked overnight in soda water.<br>Push levers are wiped down<br>Screens and Trays are rinsed thoroughly

  • ALL front counter dishes (once cleaned) are returned to front counter<br>Lemonade machine put back together<br>IceDream Parts are all present.

  • Belly iPads taken to back office?

ON SATURDAY

  • Remove Shake Base from machine and turn power switch off<br>Wipe-Down inside of Machine once thawed

  • Run "Tabz" through coffee pots

  • Remove all items left in the prep cooler. Place them on a cart in the Walk-In Cooler

  • Turn off Lights<br>Salad Display Cooler<br>Monitors<br>

  • Hang the Truett Cathy sign. (In place of Limited Time Offer)

LEADER

  • Using register key, open up all cash drawers

  • All drawers should be clean and already counted to $150 by appropriate cashier

  • One drawer at a time, Remove any large bills ($10) or higher and change them out in the $600 change fund drawer for $1's, $5's and rolls of coins. <br>Any cash put IN the change fund drawer should equal the cash you take OUT.

  • Ensure all cashiers have been closed and settled on up front POS.<br>If any cashier has been opened and has not been used (has a settlement of $0), you must continue with the settlement by typing in an amount of $0 in the appropriate category.

  • Once all cashier drawers are ready for the following day, take them, as well as the $600 change fund drawer and place them in the safe in the back office.<br>$600 change fund drawer should ALWAYS be placed on top.

  • Place all cashier tickets, loose coins, and coupons NEATLY in front of the computer in the office.<br>**all loose change needs to be converted into dollar bills until you have less than a dollar remaining**

  • Flip all labeled breakers OFF

  • Lock swinging door to front counter.

  • Set store alarm and ensure door fully closes behind you.
