Pre-close Miscellaneous

  • Empty, sanitize, and refill ice bin (1/night Mon-Thurs, left - right)

  • Check catering board to confirm tomorrows deliveries are staffed

7:00-9:00 pm

Drive-thru

  • Stock Drive Thru Area

  • Consolodate sweet tea - brakdown drive-thru iced tea

  • Breakdown drive-thru lemonade (Tues, Thurs, Sat)

  • Disasemble lemonade machine - clean inside (Tuesday)

Dining Room

  • Stock condiment bar (above and below)

  • Wipe down all table tops, booths and chairs (booth cracks)

  • Keep dining room floors wept and well maintained

  • Wipe down all wooden picture frames

Counter Bagger

  • Wipe down coffee urns/urn stands

  • Wipe down all counters (FC, DT< condiment bar, underneath coffee/lemonade)

  • Clean POS Screens/till tops (Guest side too)

  • Turn off and break-down the left 2 soda towers

  • Take ice scoops from soda towers (1,2) back to dish

  • Stock all ice-bins

  • Make and Complete daily stocking list

  • Stock front counter (lids, cups, etc)

Miscellaneous

  • Clean Men's and Women's restroom

  • Clean kid's play-place (including behind)

  • Stock wipes outside of play-place door

  • Check outside trash. Remove 1/2 full or more, all on Saturdays

  • Re-stock bagging station, DT & front counter area

  • Re-stock salad dressings

  • Dis-assemble shut dividers, wipe down, reassemble

Drive-thru

  • Take back all drip trays for ice-cream/shakes/lemonade

  • Breakdown lemon station. Place lemons in a cup. discard at close

  • Place cherries in a cup. Take cherry container back to dish

  • Swap strawberry guns. Place "fresh" gun in the cooler - old gun to dish

  • Wipe down DT window/sill & walls beneath

  • Wipe down top fo ice dream machine - take lids to dish

Dining Room

  • Spot clean all galss (including play-place)

  • Empty all trashcans

  • Wipe down all marble tops

  • Vacuum all rugs. (Do this in play-place if possible)

  • Mop-it dining room/play place floors (including vestibules)

Counter/Bagger

  • Clean front/tops of all FOH refrigeration (inc. glass display)

  • Clean stainless door between FOH/BOH (both sides)

  • Coffee urns emptied and wiped, nozzles removed and control sensors wiped

  • Coffee urns left open to air-dry (tabs on Wednesday and Saturday)

After Close

Drive-Thru

  • Turn DT window "off" and lock window

  • Turn off and hang all headsets. Remove batteries to charge

  • Turn off DT KPS monitors. Spot clean as necessary

  • Take remaining two ice-scoops back to dish

  • Disassemble and clean ice-dream maching. Take all parts back to dish (Wed/Sat)

  • Break down final two soda towers

  • Refrigerate chocolate/peppermint syrup

Dining Room

  • Deck-brush and squeegee behind equpment/refrigerators (behind the line)

  • Move Trash Cans and sweep and Mop-it

  • Move high chairs and mop-it

  • Mop-it behind the line

Counter/Bagger

  • Clean hand sink with restroom cleaner

  • Office trash emptied

  • Double check stock - stock items necessary

  • DIsassemble and clean FC lemonade dispensers (Tues/Thurs/Sat)

  • Turn off menu boards

  • Coffee machine turned off

  • Red/Blue equipment hung up and put away

  • List any team members who were late or left early

  • List any team members who did not show

  • List the temp for the shake fridge

  • List the temp for the DT Fridge

  • List the temp for the salad fridge

  • List the temp for the counter fridge
