Adequate packaging shall be available to accompany the crib selection such as;

  • Clingwrap

  • Single use cutlery

  • Serviettes

  • Robust bags assorted sizes

  • Selection of round and rectangular single use crib containers

  • The Contractor must have available prepacked cribs on request, prepared from the buffet selection and including the following as a minimum: Selection of cold meats and salad items, selection of pastries and cakes, 2 slices bread or 1 bread roll, 2 pieces fresh fruit, pc items, single use cutlery and serviettes

The following bakery products will be available daily:

  • A selection of wraps, pita bread, fresh bread rolls

  • A selection of fresh baked bread white, wholemeal, and sourdough and the like must be made available each day for the residents

  • A gluten free choice (white, wholemeal or grain) must also be made available each day for residents with a gluten allergy

  • One (1) choice of freshly baked and iced, portioncontrolled cake

  • One (1) choice of fresh baked biscuits, muffins (sweet or savoury) or slice (nonIced)

FRESH FRUIT

  • Apples must be available daily

  • Oranges must be available daily

  • Two (2) additional seasonal choices such as pears, grapes, plums, peaches, nectarines, apricots, cherries, kiwi fruit, mandarins, avocados, bananas, etc. Stone fruit selections must be supplied when in season

YOGHURTS Selection of three (3) varieties

  • one (1) Natural

  • one (1) flavoured

  • one (1) diet

PC ITEMS to accompany the crib selection are to be available and to include;

  • Salt and Pepper pc's

  • Tomato sauce, BBQ sauce, etc pc's

  • Mayonnaise and Vinaigrette pc's

  • A selection of jams, honeys, vegemite, peanut butter pc's

  • Selection of margarine and butter pc's

  • Biscuits and crackers, savoury and sweet pc's

MEAT AND FISH SELECTION

  • Roast meats Minimum of four (4) selections: The meats are to be cooked on Site daily and must include, lamb, pork, beef, and poultry

  • Minimum one (1) selection of chicken (cooked daily, whole portioned roast, marinated drumsticks, fillet, etc.)

  • Small goods and processed meats minimum of sliced ham and 2 others. (e.g. salami, ham, cabanossi, metwurst, chicken, pastrami, etc.)

  • A selection of quality tinned fish (minimum of two choices) must be available daily. The choice must be varied and include salmon, tuna, herring, sardines in tomato sauce, and the like

FROZEN PASTRIES/ PIES SELECTION

  • A minimum of 4 selections varied meat pies(assorted flavours)

  • Sausage rolls (1)

  • 1 vegetarian option (eg Spinach and ricotta)

  • Pasties 1 meat

  • Pasties 1 vegetable

  • Quiche (eg bacon and egg slice, vegetable quiche)

SANDWICH BAR Sandwich stations should be well set up to enable residents to make a sandwich roll or wrap.( Different than Salad ingredients below)

  • Appropriate “sandwich ingredients” must be provided that are fresh and innovative with a minimum selection of eight (8) choices varied daily

  • Bulk butter, margarines

  • A suitable range of bulk pickles, chutney, mustard

  • A suitable range of salad dressing, mayonnaise, sauces, condiments, etc

SLICED FRUIT

  • Sliced Fruit Four (4) varieties rotated daily. Fruit should be attractively displayed in mixed platters with skin removed

SALAD ITEMS At a minimum, the following must be available each day

  • Sliced tomato core removed

  • Beetroot (sliced and baby whole alternating)

  • Sliced cucumber

  • Sliced red onion

  • Shredded lettuce

  • Pineapple rings

  • Hardboiled eggs

  • Sliced cheese

  • Mung beans or alternative

  • Snow peas

  • Carrot Sticks

  • Celery Sticks

  • Assorted dips

PREPARED SALADS

  • Potato Salad daily

  • Tossed Green Salad daily

  • three (3) additional Salad choices as a minimum to be rotated daily such as mixed green, Greek, Waldorf, Caesar, Seafood, Avocado etc. (as per approved menu)

  • 1 x Salad choice rotated daily either pasta or noodle (as per approved menu)

  • 1 x Salad choice rotated daily either rice or bean (as per approved menu)

CHEESES

  • A selection of three (3) cheese varieties (brie, fetta, smoked etc)

  • Sliced cheese

GRAB AND GO, MYO AND SANDWICHES as per agreed menu

  • Minimim three (3) selections daily Leftovers from the previous night may be used for one (1) selection. Must be displayed attractively in single use crib containers with appropriate food signage (e.g. dish description, use by date, reheating instructions, etc.)

  • Two (2) daily MYO wet dish specials to be displayed attractively (in the cold bain) with clear instructions for residents to follow. Note: Pasta and rice is not considered a selection if it is an accompaniment to a Wet Dish on offer

  • 1 x Other meals item like pizzas, quiches, hotdogs, etc., must also be made available (minimum of one (1) selection)

  • A selection two (2) choices of “grab ‘n’ go” sandwiches or wraps suitable for toasting are to be available as part of the crib selection (eg ham, cheese and tomato or cheese and tomato or ham and cheese, etc.). These must be clearly labelled, identifying date packed, handling, storage and “use by” or “best by” guidelines and are to be varied daily. Two choices of grab ’n’ go sandwiches or wraps must be available for the fullservice period

ACCOMPANIMENTS in crib section the following will be available daily:

  • Pickled onions

  • Gherkins

  • Pickled cucumbers

  • Olives (whole and stuffed)

  • Sundried tomatoes

  • Roasted Capsicum

  • Chillies (can be Jalapenos)

  • Salt and Pepper

  • Tomato sauce

  • BBQ sauce

  • Chilli Sauce

  • Worcestershire sauce

  • Mayonnaise and Vinaigrette pc's

  • Vinaigrette

  • Balsamic Vinegar

  • A selection of 1 -chopped fresh chilli, Spring onions, fresh bean sprouts.

  • Fresh Broccolli florets and Cauliflower florets

  • A selection of 1 frozen vege -Corn Kernels, peas, Green beans

  • Tinned selection of 2 - Balsamic Roasted Eggplant, Bean mix, chickpeas, bamboo shoots, champignon's, lentils etc

  • Selection of 2 - Pepitas, Roast nuts, Dried onion flakes, seeds and nuts, dried fruits

  • A selection of 2 - Pasta plain, Cous Cous, Quinoa, brown rice, lentils

  • A selection of 1 - Glass Noodles, crispy noodles, Hokkien noodles, rice noodles

  • A selection of 1 -fresh vegetables -Sliced Mushroom, Grated carrot, Capsicum slices

ADDITIONAL AGREED DIPS, CHEESE, MEAT LIST (outside scope) AS PER EMERSON Selection Alternate Daily

  • Additional dip selection 1 additional to 2 already in scope -Eggplant dip, Hummus dip, Guamole dip, Tzatziki dip, Spicy capsicum dip, caramelized onion dip

  • Selection 1 additional cheese - Diced Fetta cheese, Haloumi cheese.

  • A selection of 1 - Bacon pieces, Shredded Marinated beef, Shredded Marinated Pork, Shredded Marinated Chicken, Shredded marinated Lamb
