OUTLET OPERATIONS

Staffing

  • Is labour being managed within budget?

  • Is the fortnightly roster posted and accessible to staff?

  • Is the outlet fully staffed?

  • Have all employees completed induction training modules 1 and 2?

  • Are staff wearing the correct uniform and present in accordance with grooming guidelines?

Cash Handling

  • Was the previous day's cash reconciliation correct?

  • When was the last staff huddle held?

  • Are all forms in use approved (numbered)?

  • Are the WHS Committee Meeting minutes posted on the noticeboard, and are they the most recent minutes?

Marketing

  • Is all AAFCANS signage up to date, clear and in good condition?

  • Is the site free from old or non-AAFCANS signage ?

  • Are there any handwritten signs or tickets?

  • Are all public notices on noticeboards and not on walls?

Menu Offering

  • Does the outlet have the prescribed menu for its size?

  • Are menu items correctly displayed, maintained, garnished and portioned ?

  • Is the menu clearly visible to customers?

  • Are all current specials being promoted to customers?

  • Are recipes being followed?

  • Are the correct serving utensils being used?

  • Do staff demonstrate good knowledge of the menu items?

WHS INSPECTION

Administration

  • Are emergency plans documented and up to date?

  • Are staff training records up to date?

  • Are the SOPs, Safe Work Method Statements and Hazard registers up to date?

  • Is the WHS contact list up to date?

  • Are product temperatures recorded on delivery?

  • Are temperature records maintained for refrigeration units?

  • Are process temperatures and time logs being completed?

  • Are cooking times and temperatures monitored and recorded?

  • Are temperatures recorded for food held in hot or cold serveries ?

  • Are cleaning schedules completed for the outlet and mobile food vans?

  • Are pest control records maintained?

Building Exterior

  • Is the outside of the building clean and clear of rubbish?

  • Are there any trip/slip hazards?

  • Is there adequate lighting?

  • Are external bins lidded?

Building Interior

  • Ceilings and walls in good condition - clean, no flaking paint?

  • Floor surfaces and mats are clean and in good condition?

  • Bins are located at suitable points and emptied regularly?

  • Brain Marie's are clean and lights have covers?

  • Benches are clean and in good condition?

  • Equipment guards are attached and working (eg meat slicers)?

  • Vents, fans and extractors are clean and serviced?

Electrical

  • Plugs, sockets and switches are in good condition?

  • Are any cords frayed or in poor condition?

  • Is all electrical equipment tested and tagged?

  • Are equipment tag out procedures in place?

  • Are any double adapters in use?

Motor Vehicles

  • Vehicles are clean, tidy and in good condition?

  • All vehicles have serviceable fire extinguishers and first aid kits?

  • Vehicle pre-start checks are being completed?

Chemicals

  • Chemical register is up to date?

  • All containers are clearly labelled?

  • Material safety data sheets are available where chemicals are used and stored?

  • Material safety data sheets are current (less than 5 years old)?

PPE

  • Is PPE provided and in good condition?

  • Are staff wearing/using PPE correctly?

Storage and Containment

  • Stacked goods are stable and heights correct?

  • All food is stored off the ground and not in contact with walls?

  • Raw foods are separated from cooked foods?

  • Storage containers are covered and labelled?

  • Foods in storage are rotated by use by or best before dates?

  • Chemicals are stored separately?

  • Fridges are clean, door seals are checked?

Amenities

  • Toilets and washrooms are clean ?

  • Drinking water is supplied?

First Aid

  • First aid kit is checked monthly?

  • First aid kit use is recorded?

Fire Protection

  • Fire fighting equipment is serviced and tagged?

  • Fire Warden and deputy are current and trained?

  • Trial evacuation carried out within last 12 months?
