  • Is unit and surrounds clean?

Drinks/sandwich chill unit

  • Is the unit well stocked, clean and eye catching?

  • How many filled rolls and sandwiches are available and is this appropriate to the time of day?

Hot counter

  • Is counter glass and unit clean?

  • Are products displayed neatly, in correct stock rotation (ask questions) and appropriate for the time of day?

Cafe counter

  • Is the glass frame and base clean?

  • Does the counter look full and eye catching?

  • Is till/serve over area clean appropriately displayed?<br>

  • Are cutlery and containers clean?

  • Look beyond counter, is the view good & clutter free?

Customer area

  • First impressions. Does it look clean & tidy? Floors, skirtings, light shades, tables, chairs & table talkers?

Customer toilets ALL toilets - Male, Female & Disabled.

  • Are toilets & sinks clean with supplies of soap, toilet paper and hand towels if used?

  • Are hand dryers clean and working?

  • If baby changing table is there - is it clean and in working order?

  • Overall impression of cleanliness?

Back counter

  • Are all back gantries/shelves clean & hygienic and the cupboards below organised, clutter free and clean?

Equipment

Coffee machine/hot water urn

  • Are coffee machine and hot water urn clean and being operated correctly?

Bain marie

  • Is bain marie clean externally and free from debris internally?

  • Are contents appropriate to time of day to maximise sales & minimise waste?

Griddle

  • Is griddle and surrounding area clean? (check drip tray)

Deep fat fryer

  • Is fryer and surrounding areas clean?

  • Are baskets clean?

Hob/toaster/griddle/panini grill

  • Is equipment and surrounding areas clean including crumb tray?

Dishwasher

  • Is dishwasher clean internally and externally including door seal and hinges?

  • Are arms free from build up of plastic etc.?

Kitchen

  • Are all areas/cupboard clean, clutter free and hygienic?

  • Are all cleaning chemicals approved?

Freezers

  • Are all freezers clean external and internal?

  • Are all stock levels & contents appropriate to shop use and correctly labelled & stored?

Fridges

  • Are all fridges clean external & internal?

  • Do ALL contents have correct product ID labels with accurate dates and are correctly stored in sealed containers in correct fridge i.e. RAW or RTE?

Stock

  • Are stock levels held in store appropriate to shop use and correctly rotated?

  • Are cleaning material levels vs use appropriate?

Compliance

  • TECH DOCS - check 6 week history of Tech Docs 1,2,3 & 8. Noting any corrective actions and re-training if required. Counter sign all Docs reviewed.

  • Is the 90 minute rule for cooling and refrigeration adhered to? Give example from visit.

  • Is cleaning schedule realistically completed and reflecting cleanliness of shop on this visit?

  • Have all previous EHO non conformance issues been rectified? Note any outstanding issues and follow up with check on Maintenance Tracker.

  • Is hand washing sink being used for hand washing ONLY and correct procedures in place?

Admin

  • Has duty manager reviewed weekly KPIs? What is store's main focus to drive sales this week?

  • PROMOTIONS & OFFERS.<br>Observe and discuss with staff - record outcome.

  • Check 3 week history for sell out times and returns being used to maximise sales and minimise returns?

  • Are all actions from today's visit recorded in diary and signed by manager?

  • Are staff knowledgeable of knead to know content and is newsletter signed off as read & filed?

Summary & action points

  • In summary - list the most pleasing points from today's visit AND TELL THE TEAM!!!

  • Recap on the number one priority for the next visit,

  • List all action points in shop diary & ask manager to countersign actions agreed. Attach a photo of page.
