Baking

  • Cooking equipment (ovens, stoves, etc.) clean & in good repair.

  • Cooking Equipment calibrated per schedule.

  • Record Date Of Last Calibration.

  • Record Oven Temperature (Celsius)

  • Record Finished Product Temperature (Celsius)

Post-Bake/Staging

  • All Racks Cleaned & Sanitized.

  • Drying Room: Air Purifier Is "On" and Operating Properly.

  • All Ready Product Is Placed On Racks And Put In Drying Room As Quickly As Possible.

  • Supervisor Name & Signature
