Primary

  • Chutes off and wiped down

  • Foil bags/Sleeves/Bowls/Lids restocked

  • Coldwell is off and clean

  • Centerline merco is off and clean

  • Multigrain restocked

  • Soup warmer & bun toasters wiped down

  • Soup is labeled and taken to the walk-in

  • Sanitize all surfaces

  • Floors clean

  • Post picture of primary area

Secondary

  • Chute off and wiped down

  • Sanitize all surfaces

  • Menutabs/Bowls/Lids restocked

  • Standing merco is off and wiped down

  • Ovens are off and wiped down

  • Mac is restocked

  • Floors clean

  • Post picture of secondary area

Fries

  • Open fryers filtered and oil levels good

  • Fry chutes clean and wiped down

  • Walls behind fryers clean and wiped down

  • Fries restocked (6 cases)

  • Floors clean

Prep

  • FOH lowboy is stocked except Saturdays

  • BOH lowboy is stocked (30 parfaits for morning) except Saturdays

  • Secondary lowboy is stocked except Saturdays

  • Bowls/Lids all restocked

  • Required items taken out to thaw (Corn/Tortillas)

Dish/Mopsink

  • Raw soak tank clean

  • All dishes clean

  • Back cage area clean

  • Floors clean

  • All trash taken out

  • Dust pans cleaned out

  • Mops/Brushes/Squeegees all stored in proper area

  • Vents placed in sink with degreaser

  • 3 compartment sink clean

  • Whale empty and clean

  • All dishes returned to designated areas

  • All fridges and cabinets are on and working properly

  • All chemical bottles returned to designated area

  • Store is switched to unoccupied

  • Set alarm

  • Sign off
