Front of House

  • Ice Dream Spindles (look for caked on shake mix on the bottom of the motors)

  • Is all dairy off the counter? (look for milk, whip cream)

  • Do all 3 lemonades feel cool to the touch?

  • Are the 3 ice scoops in their holsters with the handle up (to ensure the part we touch never touches the ice)

Ice Machine

  • Is the ice bucket hanging upside down when not in use?

  • Is the Big Ice scoop clean and in the holder?

  • Is the ice paddle clean and hanging up?

Inside Ice Machine

  • Check the 2 spouts in the top (where the ice falls down) for mold/debris

  • Check the sliding doors and the rail for mold/debris/cracks

  • Pull the metal shelf out and check for mold/debris/cracks

  • Make sure the main door is clean and in good working condition

Secondary

  • Are the oven door handles clean?

  • Is the egg grill clean? Has the scrape bin been emptied?

  • Is the grill duke free of debris?

Temperatures

  • Record the Temp of the centerline cooler

  • Record the Temp of the Cooler

  • Record the Temp of the Freezer

  • Is the chicken chopper in good condition?

  • Have the biscuit duke slot

  • Egg grill cleaned properly? Is the bin emptied?

  • The grill duke free of debree?

  • Is centerline cooler at temp. What is the temp. Check freezer and cooler too.

  • Is reading temp good for both rail and cooler

  • Is side breading clean

  • Freezer temp, all 6 thaw temps

  • Are grills on counter on ice (check ice) and have lids

  • Is breading lid closed when not In use

  • Are all Jennie’s filled properly. Add open fryers too

  • Are the grills slats clean and open to allow heat to fully cook product

  • Is there water in soup pot (when filling three holes should be visible when putting in new soup)

  • Is all food off freezer floor (include karm food)

  • Dump stations. Top needs to be sanitized

  • Are any chemicals above food/on counters. Add this to every section.

Walk in cooler

  • Proper temp

  • Any open containers. Date labels on everything.

  • Are shelves clean of dust/mold

Dishes

  • Are all dishes properly stored? Look at dish rack. Is here any moisture stored in stacked buckets/pans. Look for knives etc in catch all basket

  • Test dishwasher sanitizer after a round of dishes. If possible test sanitize sink too

  • Are sanitize and rinse sinks clean
