Opening Checklist

  • Locate 2 buttons on RIGHT side of the door near Pepsi fridge and turn them on

  • Login the POS using your punch code and turn on CDS (Customer Display Screen)(check for any pre-orders)

  • Turn on Saj Press by pressing the center white button

  • Turn on HOT CASE by pressing Power button (Temperature preset at more than 160 F)

  • Turn on STORE LIGHTS by buttons located in front of sink area (3 buttons including washroom)

  • Turn on line water heater at 80 C and add half bucket water in each heater

  • Charge music and deliverect tab if required

Re-Heating

  • Break big chunks of rice using hand until they’re separate (use gloves)

  • Reheat RICE, CHICKEN and BEEF at 380 for 20 mins or until temperature reached 60 C. (If the bins are more than half then reheat for 25 mins and after 10 minutes shake the bins so they get heated evenly)

Cleaning

  • Clean SAJ DOME using steel scrubber and soap water. After scrubbing, use a cloth to wipe it down with sanitizer

  • Clean TABLES and LINE TOPS using new cloth and surface cleaner

Washroom

  • Mirror is clean and doesn’t have any dirt on it

  • Hand sink and pot is clean without any blockage

  • Walls and floors are clean without any dirt or marks

  • Soap and paper towels are stocked

Equipments

  • Turn on Saj dome up to the black marks on the gas knobs (Turn on only 2 with knobs on them?

  • Turn on FRIES FRYER at 350C

  • Turn on FALAFEL FRYER at 350C

  • Turn on HOODS switch located at back area near drinks

  • Assemble chicken seekh on the shawarma machine from the freezer.

Line setup

  • Assemble the toppings and sauces on the line and make sure all the veggies look fresh (keep the lids on toppings to maintain temperature)

  • Change the reheated bins of chicken and beef and put them on hot line with rice

  • Setup Salad Section from the Salad fridge

  • Put cash in the till

  • Place Saj bread in the fridge below Saj Press

Compliance

  • Check temperatures for hot and cold holdings using temperature log

  • Fill sanitizer bucket and check the ppm using test strip (should be more than 200ppm)

  • Turn music on

  • Turn on open sign

11 AM to 4 PM

  • Cook rice using the recipe posted near the prep table if required (ask supervisor)

  • Check for backups in the front fridge below shawarma machines and walk-in fridge

  • PAR level<br>Garlic, Hummus, Spicy Garlic - 3 bins<br>Fill the steel bins from the buckets in the walk-in fridge

  • PAR level - Pickle, turnip, tomatoes, onions - 2 bins each

  • Check if any items are needed to be thawed - Hummus, Falafel, Mac and Cheese

  • Mac and Cheese - Should be 2 bowls in the back up. If not, thaw a new batch from the freezer

  • Fill the sauce bottles. Open the lids of the bottles and wash them properly, leaving no stains inside. Fill the bottles from the sauce pouches in the walk-in fridge.

  • Clean the line fridge, Saj fridge, line freezer and salad fridge using new cloth and surface cleaner

  • Fill the paper products (bowls, lids, sleeves, clamshell box) on the line

  • Remember - WHENEVER USING ANYTHING LAST, INFORM THE SUPERVISOR FAST

  • Fill the line toppings (between 3:30pm to 4pm)

Closing duties

  • Clean line, tables, patio and sink area.

  • Check if chicken and beef seekh are enough for evening rush (ask supervisor for par levels)

  • Take customers from 5pm to 8pm

  • Fill the line toppings and sauces from the walk-in fridge backups

  • clean the line properly

  • Sweep the front floor (from washroom to the POS station)

  • Take off beef at 8:30 with enough shaved beef (half or left than half)

  • clean the Beef shawarma machine and 1 of the chicken shawarma machine (if used) and clean the base as well

  • At 9PM - Take off chicken seekh and clean the grill. Turn off both the line heater (turn it anticlockwise), turn off main heater

  • Wash the line dishes

  • 9:30PM - change 3 garbage bags and clean saj press and toaster with Water and scrubber using black heat resistance gloves

  • 9:55PM - Clean final dishes (spoons, scoops, cutting board, fries bowl)

  • 10PM - Turn off sign with the button. Turn off Saj press (press the center button downside). Turn off fryer (turn anticlockwise until the mark is on off). Turn off falafel fryer (remove the black wire from behind the fryer). Turn off toaster (press the black switch downwards). <br><br><br>

  • Check all the shawarma machine knobs if they are off (at the black spot)
