Sausage Patty Preparation

  • Temper Sausage patties for 12 hours in the walk-in cooler at 34 to 38 degrees

  • Label case with the "Use By" date and time 3 days from the time it is placed in the walk-in cooler to temper.

  • Place Tempered sausage patties on the 350 degree grill .

  • Cover the Sausage Patties with the Press (max 10 under press) press timer : TOTAL COOK TIME 2:30 . ( Using Separate Press for grilled chicken.)

  • When Pre-alarm sounds, remove sausage patties to the item being prepared, or to a pan with a drain rack or trivet for hot hold.

  • If Sausage are held in the hot hold cabinet (covered) in the warming drawer (moist environment) set timer 30 minutes.

  • Scrap grill and bottom of sausage press

Batch Plain Taquito Mix Preparation

  • Place egg ring and lightly spray 350 degree grill and egg ring with bun oil.

  • Pour full carton of liquid eggs into egg ring and press preset timer. TOTAL COOK TIME 2:20

  • Season and scramble eggs .. (to 165 degrees,)

  • When timer sounds, transfer eggs to clean pan in holding equipment heated to maintain minimum internal temperature of 140 degrees.

  • Scrape Grill

  • Held in Prince Castle/ Duke warming drawer moist environment @140 degrees for 30 minutes. ( 20 minutes in steam table)

Bacon

  • Place up to two sheets of Bacon on 350 degree grill and remove the parchment paper immediately.

  • Place the press on top of the bacon.

  • Press the timer: TOTAL COOK TIME 1:30

  • When timer sounds, remove the press, and place the bacon in a Cambro pan with a drain rack or trivet or hot hold uncovered. Hold time 1 hour

  • Scrape the grill

Round Egg

  • Lightly spray the 350 degree grill and the 3 3/4 six pack egg ring with bun oil.

  • Crack a whole egg against the edge of the egg ring and allow it to fall into the ring.

  • Break the yolk with a single-use plastic fork and stir it thoroughly, then discard the fork.

  • Season the eggs and put the six-pack egg rings cover in place. Fill the steam cup completely with water.

  • Proper use of the steam cup is vital to the procedure. It is the timing device to ensure proper cooking.

  • When all the water has drained from the steam cup, remove the cover and turn the eggs, then remove the eggs to the items being prepared at the male-up table or to a pan with a drain rack for hot hold.

  • Set the hold timer 30 minutes in Prince Castle / Duke to maintain 140 degrees

Biscuits Plain and Jalapeno Cheddar

  • Biscuits are delivered frozen. Store (temper) at room temperature for at least 8 hours before baking.

  • Place biscuits on a baking pan: Maximum 15 on a large pan or 6 on a small pan.

  • Bake using oven program for biscuits: one pan Shelf C: two pans shelves C &E : Three pans shelves A, C & E

  • Total Cook Time 6:00

  • When timer goes off remove pan and Generously brush biscuits with liquid margarine after baking in an X pattern.

  • Put in Prince Castle / Duke warming drawer : HOT HOLD TIME 30 MINUTES

Ranchero Round Egg

  • Lightly spray the 350 degree grill and the 3 3/4 six-pack egg ring with bun oil.

  • Crack a whole egg against the edge of the egg ring and allow it to fall into the ring.

  • Break the yolk with a single-use plastic fork and stir it thoroughly, then discard the fork. Add 5 jalapeno slices so that they cook in the egg.

  • season the egg and put the six-pack egg ring cover in place. Fill the steam cup completely with water.

  • When all the water has drained from the steam cup, remove the cover and turn the eggs. then remove the eggs to the items being prepared at the make up table. (Made to Order Only)

  • Scrape the Grill

Crumbled Sausage

  • Use the pouchmate tool to open a bag of crumbled sausage and pour the contents into third-size pans

  • Cover the pans with solid lids and label with"Use By" date and time : 48 hours from the time the sausage is placed in the cooler.

  • Temper crumbled sausage for 6 hours in the walk-in cooler at 34 to 38 degrees.

  • USE BY TIME 48 HOURS

Sausage Gravy

  • Put the clean, empty filter holder in place on the coffee brewer and brew one pot of hot water. Pour it int0 a gravy insert pan. If using the Bunn hot water dispenser, place gravy insert pan in positioned press button to dispense water.

  • Slowly add one bag of gravy mix. Use a wire whip to stir constantly while adding the gravy mix.

  • When all mix is added, stir vigorously for 2 minutes and then allow to stand for 2 minutes.

  • While the gravy is allowed to stand for 2 minutes, use the #12 green scoop to place 9 scoops of crumbled sausage on a 350 degree grill . Spread the sausage out and heat for 1 minute. Stir with spatula at least 3 times.

  • Transfer the heated sausage to the gravy band use the wire whip to mix the sausage in thoroughly.

  • Place the gravy insert pan in the gravy warmer and set to maintain an internal temperature between 140 -165 degrees.

  • Set USE BY 6 HOURS

Tortilla

  • The person handling ready-to-eat foods places the tortillia on a clean 350 degree grill and press timer. TOTAL COOK TIME 1:15

  • When the pre-alarm sounds after 45 seconds, turn the tortillia with the black-handled spatula.

  • When the timer sounds, remove the tortilla to the make up table for product completion or follow steps below for Stagining

  • STAGING: Individually fold 5 heated tortillas

  • STAGING: Stack the folded tortillias in a Cambro pan for staging

  • Set timer : HOT HOLD TIMER 10 MINUTES

  • Pour a full carton of thoroughly shaken liquid eggs into the egg ring and press timer.

  • Set timer: TOTAL COOK TIME 2:20

  • Season the eggs with Whataburger Special Seasoning

  • Use plastic spatula to scramble the eggs.

  • When the timer sounds, transfer the eggs to a clean pan in holding equipment heated to maintain minimum internal temperature of 140 degrees throughout. Hot Holding 30 minutes in Prince Castle/ Duke

  • Scrape the grill

Batch Sausage Taquito Mix Preparation

  • Place the large 10 " egg ring on the 350 degree grill and lightly spray the egg ring and the grill with bun oil.

  • Use the #12 green scoop to place 6 scoops of crumbled sausage in the large 10" egg ring on the 350 degree grill and press the timer. Crumbled sausage heats for 1:00 before adding liquid eggs.

  • Pour a full carton of thoroughly shaken liquid eggs over the crumbled sausage in the egg ring and press the timer and cook for 2:20 . TOTAL COOK TIME 3:20

  • Use plastic spatula to scramble the eggs

  • When the timer sounds, transfer the eggs to a clean pan place in Prince Castle/Duke holding cabinet covered (moist environment) for 30 minutes. (20 minutes in steam table.

Single Taquito

  • Single Taquito Only: Use the #12 green scoop with 1/2 scoop off crumbled sausage into a line on the 350 degree grill for 1 minute.

  • Spray the 350 degree grill with bun oil next to the crumbled sausage.

  • Place a single 3' egg ring (with handle) on the prepared area and fill the ring with liquid eggs. (Season only if its a single plain taquito.)

  • Lift the ring and scramble the crumbled sausage into the eggs for a single sausage taquito.

  • When the eggs are firm (165 degrees) remove them to the prepared tortilla and scrape the grill

Pancake Batter Preparation

  • Pour 1 quart cold water into 8-quart container

  • slowly add 1 bag of pancake mix to the water, stiring constantly with a wire whip until the batter appears slightly lumpy

  • Fill the pancake dispenser with pancake batter

  • Replace the lid on the dispenser. Label it with the "Use By" date and time ( 24 hours at 38 degrees) and place it in the reach-in cooler for production.

  • Cover the remaining pancake batter, and also label the container with the "Use By" date and time ( 24 hours at 38 degree). place it in the walk-In cooler.

Pancake Grilling

  • Place a clean single 3" egg ring with handle on a clean 350 degree grill section an fill with pancake batter.

  • Lift the egg ring and move it to another clean area and repeat Step 1. Continue for the rest of the pancake order; Press the timer when last pancake is poured.

  • Set timer: Total Cook time 3:30 (1:45 each side)

  • When the pre-alarm sounds, turn the pancakes to a clean grill section.

  • When the timer sounds, stagger-stagger pancakes and transfer to the serving platter,

  • Scrape the grill.

Breakfast Platter Scrambled Egg Grilling

  • Lightly spray 350 degree grill with bun oil, (Made to order only)

  • Place a single 3" egg ring with handle on the prepared grill area. Fill the ring and Lift, then fill it and lift again to portion eggs

  • Season the eggs with Whataburger Special Seasoning and scramble,

  • When the eggs are cooked firm, remove them from the grill and place them in one end of the platter,

  • Scrape the grill.
