GOOD MORNING! LET'S GET STARTED 6:15

  • Turn on all the lights at the front, middle and back section

  • Turn on exhaust in both toilets (top left and top right switches) next to the left toilet

  • Open the windows in the middle section

  • Turn on music from Spotify (Shenkin 22 or TenTo Lunch playlists) and have the volume in the marked line

  • Check all the iPads and tablets are on lets make sure delivery tablets are open for orders

  • Turn on the pie warmer on 60° and set it up with their tags

  • Check the ice machine is full. If ice is not full press the on button until the ice button is green

  • Turn on the grinders and the puq press

  • Dial in coffee

  • Make sure the milk coffee is tasting great according to recipe guidelines (22g in / 38g yield / 28-32s)

  • Make sure the black coffee is tasting great according to recipe guidelines (21g in / 40g out/ 22-24s)

  • Organise milk & jugs for service

  • Set up chocolate buttons and chai powder make sure sticky chai and decaf is stocked up

  • Make 1 batch brew: 1200ml water/70g beans, ground on number 9

  • Organise lids at the window and place the Tyro machine on top infront of customers

  • Make sure we have at least 10 cookies in the jar, when there's only 5 left ask the kitchen to bake another batch

  • 6:30am open the take away window all the way.

  • Sweep outside the front of the shop including the seating area outside, make sure to check the pie warmer glass is clean and labels are organised.

7AM

  • Open the front door and make sure all windows are open

  • Make sure the plant is moved out the front of the store and the door and umbrella area is clean

  • Check Opentable app and make note if there are any bookings for the day

  • Make sure all tables have been wiped, salt, pepper & sugar is in the centre of the tables and the chairs are tacked in

  • Make sure cutlery is clean, full and ready for the day.

  • lets check water glasses are super clean and water bottles are full and clean.

  • Make sure pastries are evenly and neatly placed in the pie warmer

  • Lets have a great shift!!
