KITCHEN

Nightly Service

  • Maintain all flooring and walls (including fridges door and door handles)

  • Clean under tables, counters and move equipment when necessary.

  • Thoroughly wash areas behind and underneath ranges, fridges, dishwashers and equipment, including exposed pipes.

  • Pick up all garbage in the kitchen every night, dispose of in garbage bins and replace garbage bags and containers.

  • Lift floor grates and clean troughs nightly.

Pastry Shop

  • Cleaning of all the equipment in the pastry such as – ice cream machine, mixers, stoves (front, tops, back, inside, etc.

  • Cleaning of all counters top, shelves, hooks for storage, work surfaces, etc.

  • Cleaning of all large metal items such as – mixing bowls, large bowls, metal cooking equipment, etc.

  • Cleaning of fridge doors and any soiled surfaces

  • Cleaning of hand wash sink in pastry

Main Kitchen

  • Cleaning of all the equipment in the main kitchen such as – stoves (inside, front, back, sides), steamers, slicers, grills, soup kettles, graters, buffalo choppers, ranges, slow cooker, deep fryers, flat top, potato rumbler, ect. Cleaning of all counters top, shelves, hooks for storage, work surfaces, ect.

  • Cleaning of all large metal items such as – mixing bowls, large bowls, metal cooking equipment, ect.

  • Cleaning of fridge doors and any soiled surfaces

  • Cleaning of hand wash sink in main kitchen

Garde-Manger

  • Cleaning of all the equipment in the GM such as – slicers, graters, buffalo choppers, mortar and pestal, band saw, ect.

  • Cleaning of all counters top, shelves, work surfaces, tables, ect.

  • Cleaning of all large metal items such as – mixing bowls, large bowls, metal cooking equipment, ect.

  • Cleaning of fridge doors and any soiled surfaces

  • Cleaning of hand wash sink in GM

Wilfrid's Kitchen

  • Cleaning of all the equipment in the Wilfrid’s such as – slicers, graters, stoves (inside, front, back, sides), steamers, deep fryers, grill, flat top, ranges, ect.

  • Cleaning of all counters top, shelves, work surfaces, heat lamps above the line including their cords, ect.

  • Cleaning of all large metal items such as – mixing bowls, large bowls, metal cooking equipment, ect.

  • Cleaning of fridge doors and any soiled surfaces

  • Clean the soup Bain Marie’s and fill them with water in order to be ready to use

  • Fill the buffet with ice at 3:30am ( ice cubes on the bottom, crushed on the top)

  • Drain and fill steam table

Other Night Cleaning Responsibilities

  • Straining and refilling the deep fryer oil in both kitchens when required

  • Disposing of used kitchen oil in the oil collection drums in the tunnel

  • General cleaning of service elevators on the basement level. Specifically the elevator tracks

  • Deep cleaning equipment and work areas as required

  • Refill the ice in Wilfrid’s buffet with cubed ice on the bottom and crushed ice on top nightly. On Sunday nights the ice bins for the buffet are to be completely emptied and cleaned, then refilled each Sunday night.

  • Remove full compost bins and bring them to the tunnel for pick up. Replace these bins with the clean bin which are left ready to use in the tunnel each night.

  • Transport the bins for dirty rags down to laundry at the end of the night.

Staff cafeteria

  • Sweep, wash, and rinse tiled area, including under the counters and buffet line.

  • Vacuum carpeted lounge.

  • Spot wash walls.

  • Spray buff tile flooring 3 times per week

  • Spot clean all seating nightly

  • Maintaining fridges door and door handles to an acceptable level of cleanliness

Kitchen Washrooms Men

  • Sweep and wash floors - vacuum where applicable.

  • Clean and sanitize mirrors, shelves, bright work basins, urinals, toilet bowls and seats.

  • Dust and clean all partitions and other ledges.

  • Spot clean for fingerprints etc. on walls, light switches, partitions, etc.

  • Remove waste paper and refuse.

  • Clean paper towel, sanitary napkin disposal receptacles (replace sanitary bag) and wipe chrome fixtures.

  • Ensure drain trap is filled with water.

Kitchen Washrooms Women

  • Sweep and wash floors - vacuum where applicable.

  • Clean and sanitize mirrors, shelves, bright work basins, urinals, toilet bowls and seats.
