Expired Item / Label Checking

  • Are all products properly stored and following FEFO?

  • All products are clearly labeled (with original and secondary label)

  • Is the expiry product tracker is available and updated?

  • Daily label check is done and signed by the person who did the label checks

  • All products are in up to standard quality and no expired item found in the store.

Chiller, Freezer and Display Fridges

  • All food in the fridge are below 5'C

  • All food in the freezer is not below 18'C

  • All display fridge are below 5'C (including cake fridge & remote fridge)

  • If the fridge/freezer is not in the required temperature, was it log in FOHD and the product has been removed?

  • All container from the freezer have cover, no broken container or torn boxes found inside (there should be no cardboard inside the chiller)

Cleanliness

  • All fridges and freezer are clean (including rubber seal, air ventilation, and no rusty shelves)

  • FOH & BOH floor are clean (no tissue, food residues and coffee granules during off peak)

  • Dishwashing are ( corner of the dishwashing machine, under the sink and chemical storage area have no evedence of dust or dirt accumulation)

  • Underneath of the chillers, freezer and display fridge are clean and no evedence of food residues, dirt buildups and dusty pipes)

  • Are hidden corner like behind the microwave, griller, and counter area clean and free from dirt?

  • Dry storage like cabinet and drawer are clean and free form dust

Ducumentation

  • Fridge and Freezer temperature are being monitored correctly

  • Receiving records are available and properly filled and clearly mentioned receiving temperature

  • Pest control treatment and Grease trap treatment record are available (recent record)

  • Water laboratory test is available and clearly mentioned that has no sign of contamination

  • PIC, Basic food Hygiene and OHC certificates of all team member are available and no expired.
