LEARNING & DEVELOPMENT

Training

  • Do all trainees have a certification date?

  • Certification Date

  • Are learning contracts up to date?

  • Are there specific tests/paperwork printed?

  • Is the trainee on the bar?

  • Is the trainee on shift with a trainer?

  • Is appropriate training taking place?

Procedures

  • Check 5 products for day dots

  • Check 5 mixes that are made in house

  • Are all decanted spirits/products labelled correctly with name and abv%?

  • Are waste and promo tabs being used correctly?

  • Check a selection of cut fruit for quality

  • Check a selection of dehydrated fruit for quality

  • Is there enough dehydrated fruit cut?

  • Are 'how to' sheets for cutting fruit displayed?

  • Is the fruit cutting risk assessment sheet signed?

Staff Standards & Knowledge

  • Are uniforms at standard? Minimum 50% staff

  • Do staff have key points knowledge?

  • Do staff pass a random cocktail spec?

  • Are bartenders moving with a sense of urgency?

  • Are bartenders giving names/handshakes when the opportunity presents itself?

  • Are the floor standards high? (Surfaces/Menus/Candles/Interaction etc)

  • Are all staff receiving and reading bi-weekly newsletters? Quiz staff on content

  • Are there spare key points cards and manuals in store?

  • Watch bartenders for 10 minutes and give feedback..

OPERATIONS

  • Is the music being played and volume suitable?

  • Is the temperature suitable?

  • Is the lighting suitable?

  • Is the morale and energy of the team at company standard?

  • Is a shift planner in use?

  • Is the pour test sheet filled in?

  • Are the toilets clean and stocked?

  • Is BOH clean and tidy during shift?

  • Are fridges and freezers clean and at correct temperature? (Fridge 3-5, Freezer -0)

  • Are all stations open?

  • Are beautification standards high?

  • Are trial shift shirts available and clean?

BUILDING & EQUIPMENT

  • Are tins and muddlers in good condition?

  • Are the correct mixing glasses being used?

  • Are bar top mats correct and clean?

  • Are chopping boards clean and being used?

  • Are the correct containers being used?

  • Is all equipment working and PAT tested?

  • Do spindle mixers have chains attached?
