Entrance

  • Who is the manager on duty?

Bookings

  • Are bookings being taken online and over the phone correctly?

  • Is the booking system being used effectively? i.e. max covers with minimum dead time between turns, re confirming bookings for minimal no shows, all customer information being taken etc.

  • Is the door being managed to allow the kitchen to keep up with the pace?

  • Are people being acknowledged quickly upon arrival?

  • If there's a wait time, is the queue being managed correctly, and people encouraged to wait?

  • Are large bookings being re confirmed to ensure minimal no shows?

Internal

FOH

  • How busy is the venue?

  • Is the internal customer area clean and tidy?

  • Are all tables clean and ready to be seated if possible?

  • Does each table have the correct things on it? I.e. Kitchen roll, drinks menu, cutlery etc.

  • Is the music, heating & lighting all at the correct level for the time of day and how busy the venue is?

  • Are the staffing levels correct on the floor?

  • Is there a manager touching tables and generally interacting with the team and customers?

  • Do all staff look presentable and on brand?

  • Are all secondary areas set up and ready to go if needed, or for show arounds?

  • Is it clear that there is a special on, and what it is?

Toilets

  • Are the toilets clean and in a good condition?

  • Is ther toilets paper available in all cubicles, and is there soap?

  • Are there any maintenance issues not taken care of? Missing toilet seat, door locked closed, missing lock, hand dryer not working?

Bar

  • Are drinks coming out in a timely fashion?

  • Are the drinks being made to spec, and in a cold, clean glass?

  • Is the bar tender aware of the Redbull perfect serve?

  • Is the RedBull fridge full? And do they have all flavours required on site... Regular, Sugar free & tropical

  • Are the bar staffing levels correct?

  • Are all glassware and mugs on the bar clean and in good condition ready to serve to customers?

  • Is the bar clean and tidy? Is it clean under and around equipment also?

  • Is there any sign of pest activity anywhere in the bar area?

  • Is all bar equipment present to deliver the menu correctly? I.e. blow torch...

  • Is all bar equipment clean and in good repair? Is the bar set up & back bar all in good condition and appealing to customers?

  • Are there signs of any old bar fruit lying around the venue?

Pass

  • Is the pass being managed effectively?

  • Is the food coming out to spec? & does it look correct on the plate?

  • Is the food wait time within 20 mins?

  • Are all waitress stations clean and free from clutter, and well prepped?

  • Is the Deliveroo tablet being managed effectively?

  • What’s the overall score out of 10 for the venue atmosphere?

Compliance

  • Are all necessary licenses up on display?

  • Is there an easily accessible allergen book available in multiple places around the building?

  • Are there first aid kits on hand around the venue?

  • are there any trip advisor reviews that require a response?

  • Are there any outstanding complaints that require a response?

  • Are all BOH areas clean and tidy, hallways clean, staff areas tidy etc.???

  • Are all fire exits clear & free from clutter? And is all fire equipment available where it needs to be?

  • Is the banking being done daily? and are there no variances in the safe, or subs to staff?

  • Is there a staff notice board with appealing information and incentives on it?

  • Are there any old posters or notices up around the venue?

  • Is the venues Polaris up to date for the week to date?
