Merchandishing

  • Are all chalk boards in real white chalk pen and advertising appropriate Brand promotions / poster frames are upto date and relevent inc toilets

  • Advertising - there should be at least one drink board, one food board and one personality board - the messaging should not be confusing or have too many on display at any one time

  • Are the food and drink menus clean and unsoiled

  • Does the Team know what is on today? sport, food specials, soup of the day / upselling items and revenue targets required

A Great Bar

  • Are our spirits all displayed by type -Vodka's, Gin's, Rum's, Cognac's etc? Do we have a stunning Whiskey Display -Our back bars are key to up-selling. Maximising Revenue is key

  • Are all fridges fully stocked - labels outward facing, clean and all lights are working

  • is personal protection available, Googles, apron, rubber gloves etc

  • are the beer line cleaning bottles clean and not left in solution

  • Is all the chemicals to run the bar stored in a separate area? Only trained people should have access - Everyone should have a separate Chemical / Cleaning products area

  • are all store rooms tidy and well organised and stock rotated

  • Gas canisters are all tied up properly

  • is the co2 detector working if you have one?

  • No food should be stored in the cellar or stock items left on the floor

  • are all the lights working

  • is the cellar hatch or drop clear, clean and in safe working order

  • is the ice machine clean and cleaning schedule on display weekly- is the scoop left in clean water daily and not inside the machine
