• Shake, clean & refill syrup pumps if required

• Take out bins before service

• Double check Milk & water waste drums are empty

• Backflush groupheads with portafilters in to ensure no chemical present

• Clean Microfibres at steam wands

• Top up Malkonig E80 grinder hopper with beans

• Dial in (18g dose / 30 seconds / 36g yield)

• Set up knock box with compostable bin bag

Breakfast Sandwich Prep

• Assemble 1 sausage patty / 1egg patty / 1 cheddar slice in between English muffin & microwave on high for 1 minute before wrapping and putting in hot hold. Stock hot hold from left to right (use first right)

• Ensure prep area is sanitised & clean

• Wearing gloves, prepare 10 breakfast sandwiches & microwave (5 at a time)

• Wrap sandwiches in parchment & put in hot hold on bottom shelf.

Portuguese Tarts

• Put tarts in hot hold

Pastries & Treats

• Fill display with treats

• Fill baskets with pastries

Sausage Rolls

• Microwave sausage rolls for 1 minute & put in hot hold
