Service Standard

  • Bartender image and appearance label

  • Knowledge of the signature drink of the day (with and without alcohol)

  • The Bartender is always on duty.

  • Address guests within one minute of their arrival.

Order Taking - Server

  • After you take a guest’s order.

  • Repeat the order back to the guest. Relay the guest’s order to the bar being careful to mention any changes from the standard drink (…).

  • (…) Use the pivot point system to deliver drinks without having to auction them off.

  • If a guest does not want a drink

  • Place down the coaster on the table plain side up.

  • Offer to take the ladies’ order first.

  • If a guest is not ready to order or unsure about the order, make a suggestion If the lady is still not ready, switch to the gentleman.

  • Listen carefully to what the guests are requesting.

  • If the bar is busy, write the order for them and announce that you have placed and order (get a time frame from bartender).

  • Be sure and follow up on the order 1 minute after ordering.

  • Make sure that you are collecting the correct order.

  • Make sure that the order was prepared as the guest has requested it.

  • Deliver the drinks to the correct table.

  • Announce the drinks as you place them in front of the guest: “Here is your Piña Colada Mr. (…)".

  • Always move clockwise around the table and/or bar.

  • If a chair at the table is empty we will still count the empty chair.

Serving a Beverage - Server

  • At the bar, all beverages will be served from the front of the guest with a cocktail napkin or coaster.

  • All beverages will be served with a straw with the exception of drinks served neat or straight up.

  • We have 3 minutes from the time when a guest ordered the beverage to get it to them.

  • Announce the beverage which you have prepared for the guest: “May I present your Cosmopolitan?” - “Here is your Frozen Fruit Punch Mr. (…)”

Checking Guest Satisfaction - Bartender

  • We will check guest satisfaction within 1 minute from delivering each beverage during a guest’s entire visit, and as long as the guest are in our scope.

  • Guest has just received his/her drink: “Are you enjoying your Piña Colada?” - “Is the Piña Colada made to your liking?”

  • Guests drinks are ¾ empty: “May I offer you another Dry Martini?” “Would you like a refill Mr. (…)?”

  • Guests have no drinks in front of them and have just arrived: “May I offer you a light, refreshing Mojito?” - “Have you decided on what you will be having this evening?”

  • Guest has been at your bar for 10 minutes and has refused your previous offers:

  • “Are you sure I can’t interest you in our Cuba Libre made with local rum? That drink is superb!” - “Madam I can make you a none-alcoholic beverage if you like… something light and refreshing perhaps?”

Checking Guest Satisfaction - Server

  • Guest has just received his/her drink: “Are you enjoying your Piña Colada?” - “Is the Piña Colada made to your liking?”

  • Guests drinks are ¾ empty: “May I offer you another Dry Martini?” “Would you like a refill Mr. (…)?”

  • Guests have no drinks in front of them and have just arrived: “May I offer you a light, refreshing Mojito?” - “Have you decided on what you will be having this evening?”

  • Guest has been by the pool / beach / lobby for 10 minutes and has refused your previous offers: “Are you sure I can’t interest you in our Cuba Libre made with local rum? That drink is superb!” - “Madam I can make you a none-alcoholic beverage if you like… something light and refreshing perhaps?”

Offering refills - Server

  • We will offer refills to guests or another round when the beverage is ¾ empty, by offering the name of the beverage and presenting it in the correct glass. If a guest refuses a refill at ¾, we will offer a refill again when the glass is empty.

  • When you notice a beverage that is ¾ empty, offer another round or refill:

  • “May I offer you a refill on your Sprite, Mr. (…)?” - “Will you continue with the Piton or may I offer you something different?”.

  • If the guest refuses the order, offer a refill again when the glass is empty:

  • May I offer you another Nutty Irishman?

  • Make the offer naming the drink they were drinking before.

Bidding Farewell - General

  • We will bid farewell by thanking the guest for coming, using the guest’s name, wishing that they enjoy the rest of the day (or their night) and inviting them back.

  • Team Member just walking by: “Thank you for joining us! Have a wonderful day!” - “Thank you for joining us Sir, Madam! We will be here all week just for you!”
