SO2 is present in Lemon Juice above 10ppm, our calculations show that this creates a finished product with <10ppm SO2 and therefore does not require an on pack allergen declaration.
The purpose of this inspection is to verify the the SO2 content of the Lemon Juice is within specification and demonstrate that this level of SO2 in raw material present. Select the recipe with the highest % content Lemon Juice. A sample of the Lemon Juice and the finished product is to be sent to an external lab for SO2 analysis. Whilst awaiting for the result the finished product is to go on hold.
