  • Mixers working and in good condition?

  • Fritsch line - working and in good condition? (check LCD screen, belts, scrapers, rollers, internal parts and machine panels)

  • Sartori line - working and in good condition (check LCD screen, belts, rounding drum, internal parts and machine panels)

  • Rondo line - working and in good condition (check LCD screen, perspex panels covers and belts)

  • Turkish Divider - Working and in good condition

  • Turkish Rounder - Working and in good condition

  • Ingredient bins are clean and free from damage and labeled with best before date

  • Ingredient bin lids closed not being used for any other purpose than food storage?

  • Inspect white dough tubs for damage

  • Ceiling, ventilation covers, and walls are intact with no holes and cracks, clean, no Mould, dust and rust built up?

  • Rubbish / waste removed regularly?

  • Top of ovens and provers free from flour and dust build up?

  • Brittle materials - Knives intact? Refer to Glass & Brittle Materials Register

  • Internal rack ovens clean?

  • Glass panels of rack ovens are intact?

  • Oven gloves clean and intact?

  • Wooden peels in good condition (no missing parts or splintering wood)

  • No evidence of cobwebs, cockroach, rodent, or other pest activity?

  • Oven area floors swept regularly?

  • Broom storage areas being used correctly for storing brooms & dust pans?

  • Oven cooling racks clean and intact?

  • Setters - clean and in good condition, cloth belts in good condition not fraying?

Provers

  • All lights covered, intact and working?

  • All Prover door seals, clean and intact?

  • Provers in good working condition and cleaned regularly? - no evidence of Mould or rust?

Packing area

  • All lights covered, intact and working?

  • Emergency lighting working ?

  • Door flaps clean with no build up of dirt or mould?

  • No tools/miscellaneous items left in packing areas or placed on top of equipment?

  • Brittle materials - Knives, scissors intact? Refer to Glass & Brittle Materials Register

  • Workstations / record keeping stations clean and free of debris and personal items?

  • Ceiling, ventilation covers, and walls are intact with no holes and cracks, clean, no mould, dust and rust built up? No peeling signs on the wall?

  • Is rubbish / waste removed regularly?

  • Broom storage areas being used correctly for storing brooms & dust pans? (blue for food contact and red for waste)

  • All colour coded plastic bottles labelled?

  • No evidence of cobwebs, cockroach, rodent, or other pest activity?

  • Packing area floors swept regularly?

  • Crates Clean and free from dust and dirt build up?

  • Perspex plastic covers on quick lock machine in good condition?

  • MAP Machine - working and in good condition? (check LCD screen, belts, cutters, chain, dust filters, internal parts and machine panels)

  • Slicing Machine - working and in good condition? (belts, blades, internal parts and machine panels)

  • Flow wrap Machine - working and in good condition? (check LCD screen, perspex covers, perspex pushers, belts)

Ingredient Storage Container

  • Door's closed when not unloading / loading?

  • All products stored off the floor?

  • Racking in good repair and free of ingredient spills?

  • No wood splinters from pallets on floor?

  • Evidence of cockroach, rodent, ants or other pest activity?

  • Wooden pallets in storage areas in good repair?

  • Evidence of stock rotation of ingredients?

Packaging Containers
