INSTRUCTIONS ON WHAT YOU NEED TO DO NEXT

  • You now need to order a food dish, cocktail or mocktail and coffee with specific allergen requests and follow the full process through from order, to kitchen and bar to service to the table without making comment or influencing the way the meal or drink is prepared. It is essential that you see what happens without your intervention, and that you are completely honest if any breach (however small) happens. If there are any breaches or errors made you must take immediate corrective actions and ensure that the business is revisited within 24 hours by another member of the support team to ensure legal compliance has been reached. You will need to order each item separately so that you can physically see how the process is followed. Any item not on Tenkites must be immediately removed from sale

Front of House - order stage

  • All Guests being asked if they have any allergens at the time of order

Kitchen

  • The most senior chef "owns the order"

  • Hand washing completed prior to anything else

  • 2 stage clean of the area completed

  • Chopping boards, utensils and tools of trade all changed for clean fresh items

  • Cooking appliances sanitised

  • Gluten Free fryers available, clearly labelled and sufficient capacity for menu format

  • Fresh ingredients used - nothing from saladette or pre-prepped items

  • The most senior chef re-confirms to the front of house team member and ensures it is understood before the item leaves the pass. *** THE DISH MUST HAVE A GREEN ALLERGEN FLAG IN IT ***

  • No petty cash food can be used outside of fresh fruit and vegetables

Front of house - food delivery

  • Allergen food item leaves the pass on its own and not with any other items

  • Dish MUST contain green allergen flag

Coffee

  • Four different colour milk jugs in use - one for cows milk, one for Soya, one for Oat and Oat for Almond Milk

  • Clear signage for the team showing which colour is used for which milk

  • Have you REMOVED FROM SALE any food which is not listed on tenkites with IMMEDIATE EFFECT? You CANNOT leave unsafe food for sale without exception.
