  • TURN OFF HOT-HOLD (SWITCH ON BOTTOM) AND REMOVE STUFF TO COOL DOWN

  • TURN OFF STEAM/ LINE HOLD (KNOBS ON-LINE) AND REMOVE LIDS TO COOL DOWN

  • SHUT OFF FRYERS, SAJ DOME, SAJ BREAD MAKER, SALAD STATION, AND TOASTER

  • CLEAN THE STEAM/ LINE HOLD, TOASTER AND SALAD STATION

  • CLOSE OTHER SIDE OF THE LINE AND WIPE DOWN LINE FRIDGES

  • REMOVE CHICKEN AND BEEF TOWERS (PLACE IN X-HOLDER)

  • AND WRAP THEM ONCE COOLED

  • CLEAN AND SANITIZE THE SPITS AND CLEAN THE GRILL

  • CLEAN ALL DISHES

  • REFILL ALL SAJ DOUGH HOLDERS (FOLLOWING F.I.F.O)

  • PULL: FALAFEL MIX AND TORTILLAS FROM FREEZER (IF NEEDED)

  • SWEEP AND MOP FRONT OF THE HOUSE AND REMOVE SHELBY’S FLAGS

  • WIPE DOWN ALL THE SURFACES, WINDOWS, AND TILES

  • CLEAN THE WASHROOMS (SIGN SHEET)

  • CHANGE ALL THE GARBAGES, LINE WITH NEW BAGS, AND TAKE ALL THE GARBAGE & RECYCLING OUT

  • WIPE DOWN ALL THE SINKS AND PREP TABLE

  • SWEEP AND MOP BACK OF HOUSE

  • TURN OFF THE LINE AND WASHROOM LIGHTS

  • SHUT DOWN THE FRYER AND SAJ HOOD VENTS
