Mezzanine & Ingredient Room

  • Verify scale functionality by turning unit on and zeroing (00.00).

  • Perform mid-day housekeeping to keep Mezzanine clean/sanitary.

  • Spray down inside of each tank & rinse water to drain.

  • Clean sink.

  • Clean off & store pails, lines, hoses, clamps, screws, and gaskets.

  • Secure all ingredients (drums, pails, bags).

  • Clean all utensils.

  • Clean all scales with water only; no chemicals.

  • Remove all empty drums.

  • Clean bucket platforms.

  • Clean all product container tables.

  • Spray down floor and squeegee all water to drain.

  • Remove all debris from drain and grating.

  • Ensure no glass, brittle plastics, or ceramics in production area.

  • Empty all trash containers, rinse, and replace on production line.

  • Open & inspect 1st inline filter to/from product pump. Note findings.

  • Open, inspect, & clean magnetic filter after pump. Note findings.

  • Perform boil out of all tanks and verify temperature of water.
