Pre Close

  • Clean and polish truck bar with microfibre.

  • Clean and polish all fridge doors with microfibre.

  • Clean and polish all counter tops.

  • Clean outside of Sanremo Cafe Racer Coffee Machine with a damp cloth, polish with microfibre.

  • Clean counter under Sanremo Cafe racer Coffee Machine.

  • Clean outside of coffee grinder/PUC press.

  • Clean Ice Machine and surrounding area and walls.

  • If Ice Machines water level is low, refill.

  • Clean chocolate bain marie and surrounding areas.

  • Clean and reorganise all shelves.

  • Clean and sanitise utensils.

  • Note stock needed after close.

  • Clean all milk jugs except one Oat and one Jersey milk jug.

  • Refill Lids dispenser.

  • Refill Napkin, straw, spoon and cutlery boxes.

Post Close

  • Empty and sanitise bins.

  • Empty and clean water waste bins.

  • Clean and sanitise all device screens.

  • Clean storage areas under sink and coffee machine.

  • Clean remaining milk jugs and sink area (including around taps, walls plughole etc.).

  • Wipe A board & ensure it is clean, including menu & wooden supports.

  • Empty coffee grounds bin, wipe handles and replace microfibre if required.

  • Restock minimum quantities and store them neatly.

  • Alert Brand Manager if stock is low.

Espresso Machine / Grinder / Puc Press Clean

  • Clean Sanremo Cafe Racer Machine

  • Use Brush to remove excess Coffee Grounds In grouphead.

  • Remove baskets from Portafilter & put in blind baskets.

  • Use one small scoop of cleaning powder in each blind basket & insert into each grouphead.

  • Enter machine into cleaning mode on both groupheads (hold one shot and middle button for 3 seconds).

  • After the cycle is complete repeat with no cleaning agent in the portafilter.

  • Fully dismantle drip tray & clean & rinse & dry & polish.

  • Clean steam wands.

  • Dismantle & Clean & Dry Milk rinser.

  • Fill milk jugs with 2oz boiling water for one minute before fully cleaning & drying.

  • Close hopper

  • Remove Hopper/Lid and clean rubber tab

  • Brush out loose grounds and wipe hopper and grinder with damp cloth.

  • Brush & wipe puq press in clean mode.

  • Turn grinder & puq press off.

  • Dissemble portafilters, clean, dry and reassemble.

Reporting

  • Any Issues with the close shift?

  • Please note issues, alert Brand Manager.

  • Enter Net Sales into daily sales brand portal.
